Sorry for all of the cooking posts
I am figuring out this cooking thing, and not very good at it.
What do you cook the most at home during the week? I am finding that all the recipes that pop into my head are not healthy, and very repetitive. My parents always made meat and potatoes, meat and potatoes. H doesn't have any ideas because his parents were pretty much the same way with snacky foods thrown in there. I was pretty amazed when I went to his house for the first time, and they were having nachos for dinner! I can see as a side, or app but just nachos? To each his own I guess.
Re: Recipes
Here are some of the things we make regularly:
Pasta with sauce and some veggies thrown in
Chicken Parmesan (vegetarian version)
Sloppy Joes (vegetarian version)
Grilled cheese
Stuffed peppers (YUM)
Casseroles
Hot dogs
okay and I'm drawing a blank. but I highly recommend Pinterest, i've got a lot of GREAT ideas.
I also try to prep (chopping, putting casseroles together) on the weekends if I can to reduce time during the week.
Also, crockpot meals are great for a sunday dinner because then you have dinner for sunday done and leftovers to eat throughout the week for dinner/lunches.

You'll get better at cooking as you do it more often. I doubt there are many people who are amazing cooks the first time they try. I am sure you'll end up being great at it, practice makes perfect, right?
We eat a lot of chicken in our house and there are endless amounts of things you can do with chicken.
A super easy dinner is BBQ chicken. Just thaw some boneless chicken breasts, cut the fat off, put it in a dish with some salt, pepper, garlic powder (or whatever seasons you like) and cook it at 350-375 degrees for 30-40 minutes. About 10 minutes before it is done, I toss some BBQ sauce on top of it, then it heats up and melts down over it. We usually just do easy sides like mac n cheese, instant mashed potatoes, green beans, etc with it. You can also buy 30 minute marinades, and then cook the chicken the same way.
I also make pulled BBQ chicken sandwiches. Just put some boneless chicken breasts in a crockpot (it doesn't matter if they are thawed or frozen, frozen will just take longer) along with seasonings, let it cook 3-4 hours on high or 6-8 on low. Once it's done, drain the majority of the water out of the pot, then shred your chicken (it should easily shred with just a fork), mix in some BBQ sauce and let it heat together for about 30 minutes, and you're done. We usually just put it on hamburger rolls or toasted bread. I also make chicken salad this way, but instead of BBQ sauce, I put in some light mayo, mustard celery, pickle, etc and mix it all together, then place it in the fridge to let it cool.
Google chicken casseroles and you'll find super easy ones to make that are yummy.
Chili is pretty easy to make in the crockpot and you can do it with or without meat. We usually use ground turkey instead of beef.
We had a recipes post a while ago. I believe the link to that post is in the sticky at the top of the page that Tisha posted.
