I haven't made any soups yet this season but I'm determined to try LTP's beer cheese and I have a recipee from Pinterest for lasanga soup which looks delicious.
tuesday: chicken piccata with brown rice and a side salad with homemade croutons (this may be my new favorite chicken recipe as it is super simple, light and delicious)
wednesday: pierogies and a salad or soup and grilled cheese. haven't decided yet.
thursday: edit: I'm going to make a version of the ww bubble up enchiladas, but with ground beef instead of turkey since I already have that.
friday: probably some sort of take out since the hubs will be out and I'm home with the baby
Kel I saw this on Rachael Ray recently and thought it looked simple:

I also thought of you and your question about eggplant last week when I saw this one :

I haven't cooked or eaten dinner-type food in a few weeks, but I have been craving soups like whoa.
KellDel - I make a butternut squash and goat cheese soup that I absolutely adore. I roasted a cut squash, onion, garlic and some carrots or parsnips in the oven tossed in evoo, s/p and sage...roast until everything is fork-tender. Then I transfer it all to a big pot and add a can of veggie broth and bring to a simmer. Then I puree everything until it's smooth, adding around another can of broth to get the consistency I want. Then I add a small package of goat cheese to the soup and let it melt in. It's so yummy. If I am feeling okay this weekend, I am going to make a batch to freeze in portions so I can eat it at my leisure.
M - gemelli pasta with brown butter and asparagus
T - chicken and dumpling stew
W - we ate out
Th - shrimp topped sole
F - ziti with prosciutto and peas
Kel, I have an awesome sauasage and tortellini soup recipe, it is my BIL's recipe but my nephew posted it on allrecipes

You will need a starter to make sourdough bread bowls which can take a couple of days!
yes, lachute is right. I would totally be on my way to Panera to buy a couple bread bowls
I've made this soup recently and liked it.
