Dinner help!

So I have some boneless, skinless chicken breasts out for dinner tonight but have no idea what I want to do with them. You girls are always on top of these things so I figured I'd get some suggestions from you. Any unique ideas for me? Normally I would just throw some salt, pepper, garlic and italian seasoning on them and throw them in the oven but I feel like doing something different tonight.

  • I had a package of chicken for tonight, too, so I decided to use it in an old Weight Watchers recipe - Chicken and Cheese Casserole. You cube and cook 1 lb. of chicken, and cook 2 cups of pasta (I used elbow macaroni, but sometimes use whole grain pasta to make it a little healthier).  Then mix the cooked chicken and pasta with a can of Campbell's Healthy Request cream of mushroom soup, a cup of low-fat milk, and 1 8 oz. bag of low-fat shredded cheddar cheese.  You bake it for 40 minutes at 350 degrees.  I haven't made it in over a year, but it's super easy.
  • to start: sautee red onion and garlic in 1/4c soy sauce. add cubed meat (tofu is awesome in this recipe too, but you want to "dry fry" it separately and add it at the end. cook meat for 10 minutes or until mostly cooked. mix 1 tbs sesame oil, 2 tbs rice vinegar and 1tbs of minced ginger to the sautee mixture and continue to cook. on another burner blanch about 4 cups of broccoli and add to sautee mixture. you can serve over noodles or rice or just as it is.

    you may not have all of these ingredients on hand but this is a great stir fry. i make it all the time! 

  • Mmmm, both sound good!

    My initial thought was stir fry but then I'd have to go to the store and our new house isn't in the greatest location for grocery shopping. There actually is a grocery store right around the corner, but it's absolutely terrible. 

    I might be able to pull off Kari's recipe with the exception of I can't eat anything mushroom. But I may have some cream of chicken soup. And I'd have to use pepperjack cheese... hmm.. Could be good.

  • Do you  have some onions and bell peppers? You can make fajitas..? Saute the onions and bell peppers in oil. Add seasoned salt and pepper. Remove them from the skillet. Cube the chicken and cook in oil,add seasoned salt and pepper. Add the veggies back in, mix them all together and Viola, you're done!

  • One of my favorite things to do with chicken breasts is to put taco seasoning on both sides and cook them on the stovetop... then, after you've browned both sides you add salsa on top and cover and simmer.  Serve with spanish rice and/or beans (I usually use black beans)

  • I'm probably late, but for future ideas! I made deliiiiicious chicken gyro pockets tonight. I'm in love with yogurt sauces/tzaziki. I made that with plain Greek yogurt, some dill, lemon juice, garlic, salt, and pepper. I cheated and bought a rotisserie chicken, shredded the breasts a little bit, and put them in a pita with the sauce and cucumber. I could've eaten ten of them!

  • H and I like these breaded chicken breasts. (I think I got this from Plainchicken.com.) 

    Mix together about 1/2 a packet of Hidden Valley dry ranch mix, some salt & pepper, a little garlic powder and some panko or regular bread crumbs (I find panko to be crunchier). Put some liquid ranch (I use fat-free) in another bowl. Dip and coat the chicken in the liquid ranch, then in the dry breading.

    Bake in a shallow dish at 425 until the inside is done (I make tenders most of the time, and it takes between 18-22 minutes, so breasts would take a little longer). I use a meat thermometer to test this. 

    I usually serve with Lipton rice sides or pasta sides and some steamed broccoli.

  • I'm pretty sure that I am late, but my favorite thing to do with chicken breast is to make chicken cacciatore (traditionally dark meat on the bone is used, but I think it is awesome with the chicken breast). Here's a link to the recipe from my blog:

     But I do still have a few breasts left to cook for tomorrow night so I'm going to have to steal someone's recipe! =)

  • Pick mine, pick mine! I'll be making fajitas tonight. I was going to make them last night but I wasn't feeling well. Good thing we had left overs or else I probably would have had to make something to eat. And I hate cooking when I feel crummy.
