So I had my followup appointment with my doctor on Tuesday talking about my surgery. She even showed me a video of them looking around inside! It was cool, but very gross, not going to lie, haha. While the surgery went well, because of how severe my PCOS is, the doctor wants me to go on an anti-inflammatory diet. Pretty much I have to cut out all red meat and most lean meats and focus my protein on fish and beans. Love. ly.
I went through literally a decade period without eating seafood at all. I'll have a small amount every couple months or so, just nibbling on what David will order at a restaurant, but I've NEVER ever cooked a seafood dish in my life. With beans, I'm starting to cook with them more, but I'm horrible at soaking dry beans without them all splitting. I don't have many usable recipes with beans either.
So, I'm calling for all your favorite (and preferably easy) seafood and bean recipes!!! I will post my favorite bean/superfood recipe below, the black bean and sweet potato enchilada with mole sauce!

Glad to hear the surgery went well! Hopefully the diet will help you control your PCOS. I don't really eat seafood (except maybe shrimp, crab or lobster on occasion), unfortunately. Here are a few of my favorite recipes that include beans and no other protein:

Hmm, I'm not a huge seafood fan. I will only eat Shrimp, nothing else not even fish (which for a Wisconsinite is crazy! We have Friday Fish Frys at every single restaurant and everyone goes out for it).
I do love shrimp scampi, but I've never made it myself.
I also love going to a local restaurant that serves shrimp nachos. I'm pretty sure it's just Melted colby jack cheese, really tiny shrimp, and then all of your other nacho toppings. You could try something like that at home for a snack or lunch.
I don't cook with seafood or beans very often, but I just pinned a recipe for some yummy sounding crab cakes to my Pinterest board. You could always try something like that, and crab cakes aren't hard to make.

I make big pots of beans in my crockpot. It takes between 2 - 3 hours. I usually cook about a pound of beans at a time. I love cooking in the crockpot versus the stove because you don't have to pay as much attention to them.

Hydrangea--I'm actually scared of tofu....I think it's the texture thing that gets me. While there is soy on the food pyramid I'm supposed to follow, I've been avoiding it because of the hormonal things that it can cause, and I have enough hormone issues as it is! I really should ask my doctor about it though.

Sorry I can't be much help on this one! I don't even save bean recipes anymore, because H hates them. I don't eat seafood, other than shrimp. I've never really liked it. I'm really trying to start liking it though, because it's really good for you! I just don't want to spend the money to buy it if I end up not liking it (which unfortunately, is pretty likely.)
The only fish I've ever made was marinated tuna steaks when we first moved in our house. It was pretty good- I'll post here.
1/4 c orange juice1/4 c soy sauce2 T olive oil1 T lemon juice2 T fresh chopped parsley1 clove garlic, minced1/2 tsp chopped fresh oregano1/2 tsp ground black pepper4 4-oz tuna steaksInstructionsIn a large non-reactive dish, mix together all ingredients except fish. Place the tuna in the marinade and turn to coat. Cover, and refrigerate at least 30 minutes, or overnight.Preheat grill for high heat. (I used a grill pan on the stove.)Lightly oil grill grate. Cook steaks 5-6 minutes, then turn and baste with marinade. Cook for an additional 5 minutes, or to desired doneness.Discard any remaining marinade.(I halved the marinade ingredients and just did 2 of the steaks. The ones we had were small though.)
