We're planning to spend a few days in Hilton Head in May with our daughter, who will be 8 months at the time. Anyone have a hotel/resort they would recommend? Or any baby-friendly restaurants or activities?

We have a timeshare there so I can't help too much with where to stay. But Hilton Head is really family friendly, so you shouldn't have a problem with bringing the baby anywhere.
Activities
Definitely rent bikes to explore the island - it's my favorite mode of transportation and you can get a bike with either a trailer for your babe or a little baby seat.
The beaches are obviously great in terms of a baby friendly activity. And all the beaches are pretty great.
Water activities: shrimping, crabbing, shark fishing, deep sea fishing....
Some of my favorite dining on the island that would be good choices for your family:
Signes - The best breakfast on the island with fantastic baked goods. We usually grab breakfast here our first full day and load up on bread and treats.
Crazy Crab - We love the one that's off the island. It's soooo much better than the one on the island. DH loves that it overlooks the intercostal waterway. Get the low country boil. It's everything yummy in a pot. And they do hermit crab races which would be fun for your daughter to watch.
Steamers - This is a really casual place, but they have the best bloody marys! So good our fam drinks them all day, not just in the morning.
I love Hilton Head Island. It's so pretty and peaceful. We always rent a beach house or a villa because they are usually cheaper than a hotel. We usually rent in Palmetto Dunes, but this year we're probably going with a house in Sea Pines. Hilton Head is only about 30 or so minutes from Savannah so I definitely recommend spending a day there. Also, if you do decide to rent a villa and cook seafood at home, do not go to Barnacle Bill's to purchase seafood. A little closer to the mainland, there are stands set up by shrimpers and you can purchase it fresh off the boat. My family and I always have a huge shrimp boil. Also, if you can, go to take one of the Gullah Culture tours.
