Would you go to French Polynesia in Feb?
We would only go to one island, and stay there for 7 days -- I'm worried it could end up being rainy for most of the time..

I say go for it! That being said, if you have seven days - I think I'd have gone crazy spending a week on just one island. We split our time between Moorea and Bora Bora, and I'd recommend considering doing the same (or with any other island). Honestly, I don't think Bora Bora would have kept my interested for seven days, and Moorea had more to do but after 5 days we felt we'd done everything we wanted...
And FWIW, I'd avoid the island of Tahiti. We used it only as a transit point (since that's where all the international flights come in), but DH was super-underwhelmed. When we first landed there before seeing Bora Bora and Moorea, he was like, 'Hey, this is nice.' When we came back after visiting the other two islands, he was like, 'Hey, this place kind of sucks.' It's a fine island, i guess, but it's not the reason you fly all the way to French Polynesia, IMO.
