Taos Recommendations
DH and I are thinking of a long weekend in Taos in early March. My thought was to find a small condo on vrbo and ski one day and snow shoe another. We live within driving distance so would be a road trip and we'd take all our gear.
Any thoughts/recommendations on what else to do while we're there? or where to eat?

Go to the hot springs at Ojo Caliente. I think they give you a discount if you have a lift ticket (not sure on details, look at their webpage.)
The private pool with the fireplace is really fun. And would feel great after a day on the slopes. Their restaurant is really quite good too.
It's probably a 40 min drive from Taos proper, but worth your time imo.
