Christin - The Skinny Taste Baked Oatmeal

I am pretty sure that one came from you, right?  YUM.. Thank you!  The problem is that it is not a low-cal option if I eat the whole pan before anyone else gets some, but I guess I can make that sacrifice.

Re: Christin - The Skinny Taste Baked Oatmeal

  • I agree, except that if the bananas are anything less than mushy-ripe, it turns out bitter and nasty.  Having to drown it in syrup is not diet-friendly.  I almost never have all-the-way-ripe bananas, because I like them a little green, and the first time I made this, it was gross.  If the bananas are mushy to start, though, it's awesome.  Learn from my errors.

  • Are the bananas necessary for the texture? I don't eat anything banana and thought I'd use peaches instead if it would work

  • Buddha, I think peaches would work, because they get pretty soft when cooked.  I would pre-cook them just like the bananas, to make sure they are soft enough.

Rosen, I actually picked up a couple of riper-than-normal bananas specifically for making this. Since bananas are one of the few things the 2 year old will eat without fail, they are never around long enough to get super ripe.

  • I think peaches would be great in this.  I don't see why they wouldn't work, texture-wise.

  • Yeah, I made it with pretty ripe bananas and it was fabulous.  The bananas are my favorite part, so I'm sure they could ruin it if they weren't good. I'm sure the peaches would be great.  I wonder if they might be too moist?  Then again, it's oatmeal, so it's not like it's supposed to come out dry.  Let us know how it is Buddha.  As for the portions, I immediately separated into 6 individual containers to avoid binging on it, and to make it easy to grab for breakfast.
