Hmmm... it's more difficult for me to pick a second one. I'm thinking The Poisonwood Bible, though.

I think I read this years ago and remember really enjoying it.
Can I count the Lord of the Rings trilogy as one book? It's often published all together. That's probably what I'd choose. It's engrossing, it's deep, there's lots to imagine and consider. A story that only gets better in the rereading.
For the situation where I'm hypothetically stuck somewhere with no access to more books, I'd choose something really heavy and meaty, with lots to discover. Other books that would make my short list are Crime and Punishment, Anna Karenina, and Les Miserables.
I haven't read this one, but from others I know who have, The Count of Monte Cristo might also go on my list.
