I have time to cook a real dinner tonight. I know everyone posted their meals, but I was wondering if there was a big "hit" that you've cooked lately. Only problem is that I'm really picky... Recipe must be chicken, or have no red meat in it. Other than that, everything is fair game!
I'd appreciate any suggestions!

Last night, I made "Chicken Cordon Bleu" pasta that H really liked. It was really easy to make and tasted good.

I made a couple changes though:
*Reduced fat cream cheese
*crushed Whole Wheat Ritz crackers instead of Panko bread crumbs (I put them in my Ninja blender)
*A LOT less butter

Do chicken fajitas. Really quick and easy. Just get some peppers and onions, slice them up and you are good to go!

I didn't put any water and I used half of the cream cheese, and put some frozen broccoli in there too. We had it over rice.
I made those fajitas the other night and we had them with romaine lettuce as the wraps. They were delish!

Chicken stirfry with soba noodles. Always a hit at my house! I even have one of the guys DH works with asking me to make it for him sometimes haha.
I just get the boneless skinless tenders and slice them up, cook them in a skillet with a little salt and pepper. Add what ever veggies you like (in order of what cooks longest to shortest) and then the stirfry sauce. I don't know if you shop at Giant but I know they have the kind I use its called House of Tsang (better than Kikomon).

Do you like chinese food? This lighter sesame chicken recipe is a huge hit at our house. I only make enough chicken for two servings (maybe 2.5) but I make the full amount of sauce because it's so yummy. And I stir the broccoli in with the sauce and chicken as well. Sometimes I'll add red bell pepper or onion too. So delicious!
Breaded chicken parmesan is another favorite in our house. Coat chicken breasts in flour, then egg, and then an italian breadcrumbs/parmesan cheese mixture and bake at 400 for about 20-25 minutes. Serve on spaghetti topped with pasta sauce and you're good to go! Super easy and good too.
I love chicken fajitas. Just chop up some peppers, onions, and fresh mushrooms. Season with cajun and garlic seasonings. Then add chicken when the veggies are cooked down. Serve on tortillas with a little bit of shredded cheese.
H makes amazing chicken quesadillas. Cut up chicken in chunks, cook then add 1 can of cream of chicken soup and half a jar of salsa, you can add cheese too. Then arrange tortillas on cookie sheets, fill and bake at 350 for 10 minutes.
Oh and then there's my stuffing skillet. Cut up chicken in chunks and fry (I normally fry them with a little bit of garlic powder for extra taste), then set aside. Cook 2 packages chicken flavored stuffing according to package, once stuffing is done add 1 can cheddar cheese soup, 4 oz of shredded cheese, and chicken. Best comfort food ever!
