So I just got online for the first time today and saw your post about a low-cal Mexican-inspired meal.  It's probably too late for tonight, but for the future... DH *loves* this Cooking Light recipe a friend shared (it's probably his favorite of anything I make).

It's a little high in fat but I go light on the cheese (and use reduced fat) and then don't use the sour cream to top.  I also add jalapenos to the cornbread mix for a little extra kick.  Since it works as a meal by itself, I don't worry too much about the calories.  Just thought I'd pass it along in case you were interested.  :)

    TTC #2 for a million years: SA normal, CD 23 bloodwork shows nothing amiss, ovulation detected. Next step: ? maybe CD3 bloodwork to check eggs? All out of pocket, so limited IF tests/treatments.
