Building: should we do silver or oil rubbed
bronze faucets, light fixtures, etc??

It's perfectly acceptable to mix finishes, as long as there's a consistency. ie, satin nickel finish on plumbing, and oil rubbed bronze on lighting & knobs.
IMHO, ORB faucet fixtures look really cheap unless you're getting the super expensive ones. You're also extremely limited in style options.

we upgraded to ORB when building and love love love it. I've gone through houses being build with the satin nickel and love our ORB even more.

We mixed. I felt like the brushed nickle light fixtures looked cheap compared to ORB, so we went with ORB for those in the foyers, dining room, EIK. We kinda have a very open, airy floor plan so I wanted things to blend is much as possible so we did brushed nickel for the door hardware. Our front door has a dark walnut stain so we did an ORB handle for that, but there is nothing brushed nickel nearby.
What REALLY annoyed me was that the standard faucets were all chrome but the standard bathroom lighting was brushed nickel. To get them match you have to upgrade one or the another. So annoying.
We are currently building as well. The ORB was an upgrade, but IMO, well worth it so we went for it. I think it looks much classier and more elegant for sure. Go with your gut - these things are not expensive to change later on.
One thing to consider - I think it is important to be consistent with what you choose - so you have to do the door hinges, door knobs, faucets, and lighting all the same in order for it to look good. At least, I think so - i think it would look really lame if you mixed.
