Have you been to Hong Kong?
We are thinking of doing a stop in Hong Kong on the way back home from Thailand. We will be in Thailand for 10-14 days so it'll be the last leg of our trip.
1. How long should we stay in Hong Kong?
2. Any hotel recommendations?
3. What are some suggestions on what to do/see/eat while we are there?

We had a one night layover in HK. It wasn't enough time to really get to know HK, but I'm glad we stayed one night and, at the end of a really busy trip, one night was about all we had left in us! We loved our short time there.
We stayed at the YMCA Salisbury. Not at all luxurious by any means, but it was a great location and we had a view of Victoria Harbour from our room. I would recommend it for a quick stay.
We had dinner at Hutong - it's on the 29th floor of the One Peking Place building, right by the Salisbury. It was a nice experience with fabulous views of the Harbour and the light show at 8pm. I have also heard good things about Aqua, which is one floor above Hutong. Pricey, but a nice experience overall.
Don't have much more - our time there was a whirlwind, so if you stay one night it's best not to do too much planning...explore and see what you can!
Try for 3 nights if you have the energy left.
We stayed on the Kowloon side in Tsim Sha Tsui.
We also ate at Hutong and loved it.
We rode the tram up to the Peak - aim for sunset but anytime is fine.
We rode the bus to Aberdeen and had lunch by the water.
I would have liked to explore the Sheung Wan area but we strolled through Wan Chai instead.
the ferry ride from Kowloon to Hong Kong is crazy cheap and just an experience.
also ate dinner and lunch on Knutsford Terrace.
shopped the night market and ladies market and the malls on both hongkong and kowloon.
would love to go back.
We did three nights on our way back from Thailand. We stayed at the Langham Place, when we return we will stay somewhere closer to the harbor.
Hong Kong is wonderful for just walking around and taking it all in, there is so much to see. We did the Peak Tram, Harbor Tour (next time we will try to take it on the Junk), took the cable car (bit of a train ride to get here), watched the light show at night, and went up and down the escaltors (forget what they are called.)

1. You can see the highlights in a few days. I wouldn't stay more than five unless you're planning a lot of daytrips (Macau, New Territories, outlying islands, etc).
2. It kind of depends on your tastes. I can recommend a cheap, basic, reasonably clean guesthouse built out of a few converted apartments in Causeway Bay if that's your style.

Thanks for your suggestions... Will look into this. We will be most likely doing this on the last leg of our Thailand trip. Still trying to decide between Cambodia and Hong Kong.
