I am trying so hard to get this family to eat a variety of foods and it's so hard because MY HUSBAND is so freaking picky. Lately I have just planned for me and the boys and make him fend for himself but I really need more options so we can start eating together. So, I need meals that meet the following criteria...
* Vegetarian
* Not pasta (It feels like that's all we eat)
* No mushrooms (or at least not so many that he notices and/or can't pick out)
* No broccoli (unless it's hidden -- that one is for Matthew)
* Can be made in advance and reheated, cooked in a crockpot or takes <30 minutes (not including any prep that could be done the night before)
* Not eggplant based
* Preferably not squash based
ETA: * No meats or seafood at all, but "fake meat" is okay
I swear if Matthew was this picky I would not even try to cater to him, but MH is and that causes Matthew to refuse to try it and I'm at my wits end.

stir fry with tofu or shrimp if you guys will eat that
do you eat imitation meat? i LOVE quorn chicken products. i use their naked chicken and do different chicken dishes
quesidillias
homemade pizza. i've been doing pizzas with fresh dough from harris teeter. you can do individual ones and have each person pick their own toppings

Fake meat is okay. Is this naked chicken like a sub for chicken breasts?
tomorrow, i'm making creamy baked chicken taquitos - i sub a few things to make it more mild and my kids like it. we also use flour tortillas instead - they are sturdier. you could change out the filling to be vegetarian - beans, cheese and sweet potatoes. It makes a good amount, and is fun finger food for the kids. It also freezes and reheats easily. I will serve it with steamed veggies on the side - i've been buying expensive fresh steam in the bag ones lately - worth the nearly $5 for convenience sometimes.

i wouldn't mind making two batches on a weekend and then heating up the meat and veggies one during the week as needed.
breakfast for dinner - my kids love french toast or pancakes for dinner. you can add scrambled eggs and a smoothie to it. the french toast i make in advance and freeze in batches - i heat in the oven while i assemble a smoothie - which is often from a bag/blend and all you add is yogurt or juice, and sometimes we toss in frozen banana chunks to extend it to 4 servings.
i'm sure there is some sort of meat sub that can be used to make tacos - whether it's tofu or soy crumbles. my family loves make your own taco night. i make the meat in advance, it gets nuked for 2-3 minutes. i set out a bag of shredded cheese, lettuce, jar salsa and chips and it takes less than 10 min to make dinner. i also cut up an avocado. i usually have mine as a big salad with a few chips - ava and dh love a soft tortilla to make theirs and then they load the chips with meat and cheese and nuke it and eat those, Sam loves it all in separate servings - meat first, then a pile of cheese, and then some avocado.
pizza night - we buy fresh dough at a bakery which we like better than the supermarket. we're not great a making it - it looks messy, but tastes good! Ava helps with the sauce and cheese. We divide up the dough and make minis - everyone gets what they like for toppings. DH adds meat to his - usually something from leftovers in the fridge so i'm preparing something else with it. this one takes a bit longer to make than other things we prepare. it's not as fast as i thought it would be.

we make sandwichees sauted in ranch (healthy yes i know) then we put a slice of cheese, tomato, onion and faux bacon on it YUM
i've also cooked it in bbq sauce

We love these quinoa patties. The blogger serves them as burgers, but we just eat them alone, usually with sweet potato fries. I sub plain greek yogurt for the cottage cheese.
