  • We aren't doing a party (hosting or attending) because my husband is taking this game VERY SERIOUSLY.  I'm making guac and we're doing this brisket and butternut squash chili.  We haven't made it in awhile and I've been craving it.  So good.

  • Cheesey Artichoke Dip. I made it last year and it was a huge it, so it has been requested again.

    Maybe Skinny Buffalo Chicken Dip. Maybe something else "healthy."

  • I am almost as excited about SUper Bowl food as I am about the game.

    My plan right now is to make chicken wings (a sticky, soy sauce and ginger type) and spinach dip.  Otherwise, I'm still thinking.  I do not do healthy stuff for Super Bowl Sunday.

  • Lindsay, that looks amazing. Now, I want cheese grits like woah. 

    I know I'm making rotel because I lack the ability to watch the superbowl without it. I was thinking I might make some chicken bacon ranch empanadas and then maybe get some fruit and some carrots and hummus to at least make me feel like I ate a tiny bit healthy.

    Maybe jalepeno poppers?  Baked, not fried, maybe slightly more upscale.  Off to search.

    Mashed's feta also looks good, and reminds me that I have a good recipe for a feta dip that I haven't made in a while.

    This is a great idea, but it made me laugh. I don't think I've ever seen anything healthy at a Super Bowl party outside of a veggie tray. A few years ago, we made a 7-layer dip football field (with guacamole on top and sour cream yard lines). We used beef jerky sticks for the goal posts. I think substitution is the easiest way to go. For dips, I can never tell the difference when I use light mayo or fat-free cream cheese.

  • We're going to friend's house and I hear they're doing chili and a nacho bar.  I think I'm going to try to make those pretzel bites someone posted about from preventionrd.com the other day and probably just do some wings with dipping sauces.

    I don't envision it being a very "light" day.

    Oh man, that sounds so good.  I've never had grits before, so I don't know if I'd trust myself making them since I have zero idea of what to look for.  Plus, I don't make anything that cooks for more than an hour (with the exception of Thanksgiving turkey).  But if I did, I would totally make that.

    We have no super bowl plans, but I was thinking I might attempt to make soft pretzels just for the heck of it.

  • It's my H's birthday on Sunday so I'll be making whatever he wants, or going out if he would rather.  We don't celebrate the Super Bowl.

    I'm lurking here b/c I'm looking for superbowl ideas myself but had a jalepeno popper to suggest that I always get a ton of compliments on:

    Slice @ 6-8 jalepenos in half and de-seed

    Cook 1 roll of italian or breakfast sausage, drain grease, then add 1 8oz stick of neufatchel cheese until melted and blended well. {could use shredded chicken as well}

    Stuff the peppers with  the sausage mix and bake at 375 for about 15 min, or until the pepper is soft

  • I'm making those puff pastry wraps that I love and hate Bethie for introducing to me. I'm doing half with kale, half with proscuitto.

    I might do pretzels since reading this post. Joy the Baker has a good recipe.

  • We are moving Sunday. We were invited to a party and may attend but I won't want to cook. I need no prep ideas. 
  • I'm having a superbowl party and will mostly be having junk food. Order Pappa John's with some buffalo wings chips, soda etc.

     

    But I'll be hanging this up for decoration. I made it myself. :D

  • I think we're going for minimal effort and just doing pulled pork, store-bought coleslaw, and Hungry Girl buffalo chicken dip.  The last item is healthy-ish.

    The best ever is when you slice the jalepeno lengthwise in half, clean, take out seeds.  Mix cream cheese and cheddar....cram it into the jalepeno, wrap it in bacon and then brush the outside with BBQ sauce. soooo good and you just put it in the oven 375 for like 10 minutes or until the bacon looks done.

    LIES! I made Kale chips a couple weeks ago like that and they are awful. They'd be good if you're a vegetarian, but if you have normal people taste buds they're not so scrumptious.

  • It also depends on the type of Kale. I've made it really good and really bad because I bought the wrong type of kale on accident.

    What kind is the good kind? maybe I'll risk trying it one more time in case this is the reason.

  • Whatever you do, don't sub in low fat or fat free cream cheese in jalape?o poppers of any kind. It just liquifies and doesn't hold up during baking.
