MangoMama's post got me thinking about our move. We will be driving from California to Texas. Its approximately 1600 miles/22 hours. Ryan will be almost 4 months old at the time.

That's not an option for us. We dont have enough money for all that.
I voted for three because I'm not very good at looking at a number and knowing how far it really is. We drove from San Diego to Georgia for one of our moves. Texas alone was at least a full day of driving from the Western border to the Eastern border.
The really nice thing I'd have to say is that once you get on the open road away from traffic it's a very easy and pleasant drive. There's plenty of rest stops and places to eat. Sometimes they may be a bit spaced out but DH and I did okay and I never wanted to be away from my car too long because I had the guinea pig chilling in the back seat.
Are you actually going to be required to plan your drive ahead or can you just wet finger in the air guess and then go with the flow? That's what we do. We don't make advance hotel reservations or anything we just bring a map and every night we look at what we think we can accomplish the next day.
Edit: I forgot to mention we have two cars so we have always had to have one driver per car. If we ever did it over with one car we'd be so much more time efficient. I tend to be a slow driver because I get all kinds of body aches from sitting still driving for too long.
I say two because I would want the least amount of time in the car possible.
We're driving from NJ to FL in a straight shot in October...Sophia will be 16 months. We're planning to leave sometime after dinner so she'll be ready for bed and hopefully sleep most of the way down.
Would you consider driving at night to fall in line with his bed time?
