Foodies: whore derves

did that piss you all of?  Wink

 

I need some ideas for an hor d'oeuvres dish.  Something that is relatively easy, wont need every dish in the house to make, and will stay well in a car all day for traveling purposes. So I guess that means something thats cooked. Also, I want it to be fairly hearty, so anything with a lot of protein or fiber will be best.

oh and it has to be really good so that everyone is jealous of me Wink

    Unfortunately, none of the things I can think of lend themselves to travelling.

  • Does it need to be finger food, or can it be any appetizer? A fall soup could work (like pumpkin or butternut squash)... you could pack it in a cooler and heat it up in a few minutes when you arrive at your destination. It's definitely hearty.

  • Tortilla roll-ups! I think these amounts are right, but if for some reason it doesn't look right, adjust as necessary:

    8 ounces cream cheese, softened

    8 ounces sour cream

    8 ounces shredded cheddar cheese

    small can chopped black olives, drained

    chopped onion (I can't remember how much...1/2 cup? do what looks & tastes right)

    chopped peppers of your desired heat - you can use a small can of diced green chiles for mild, a small can of jalapenos (or 1 fresh jalapeno) for medium, 1 chopped serrano for hot, or 1 habanero for kill-you-now-hot

    seasoned salt, 1 tsp or so

    large flour tortillas

    Mis all ingredients, except tortillas, together in a bowl. Spread thin layer of mixture onto tortillas. Roll up tortillas and let chill for at least an hour (overnight is good to let the flavors mingle). Make sure to tightly cover the tortillas so they dont dry out.  Slice, and serve with salsa or guacamole.  To transport, put tortillas, sliced or unsliced, in a container and stick in a cooler with cold packs or ice.

  • Dates wrapped in bacon.  Soo good.  You'd have to cook them when you got there though, so that's not ideal.

    I have seen a recipe for a squash dip from Martha Stewart.  I have never made it but it looks really yummy.

  • easiest thing ever and it does travel fine (wrap plate in foil and itll stay hot, and its good room temp too:

    Defrost a package of uncooked shrimp. Shell em, leaving the tail on. Throw them into a ziplock bag and add in some EVOO, lots of garlic - minced, and some grated Red pepper flakes (it wont be spicy I promise). Moosh it around in the bag to coat it all. Cook in a hot skillet until just done. Voila!

     It is SO good, I get tons of raves whenever I make it. And I did it with a 45 min drive once and it was fine (also have brought my own skillet and made it at other ppls homes before... it taked 5 min after all)

  • also - if you dont want to travel all day with it, put the bag with oil and shrimp and garlic on some ice and itll be Ok. Cook at the place you ate going to - takes 5 min and then the stove is free.

    They are intended to go with horseradish cream sauce of some sort, but I thought goat cheese sounded better and faster!   You have to marinate the meat for 6 hours, and make the individual crostini, but other than that, these are pretty fast.  I didn't broil the crostini, or flip them -- I just coated with the olive oil mixture, then threw them in the oven at 350 for ~10 min until they were somewhat crisp. 

    Did I mention these are extremely tasty?  (Now I'm getting hungry...)

    This is really, really good and not that hard to make.  You can make the tapenade in advance and just bring the cheese and crackers with you. 

  • I made these goat cheese cups for two parties recently (different crowds) and they were a huge hit. So easy, too. And they're definitely better right out of the oven but still taste great at room temp.

  • I love my mom's mini pizzas and so does everyone else who tries them. Totally not sophisticated a la goat cheese and crostinis, but really yummy and travel well. They are in my blog, but the picture doesn't really sell them. Mmmmm.
