This recipe for chicken-corn chowder calls for a dutch oven (though you can make it without) - I just made it last night, for the second time, and it's still delicious.

It's also crazy easy to make and pretty healthy. I cook with nonfat milk as opposed to 2% and it turns out just fine (it may be a little less thick but it's still delicious). I also add in carrots to give some more good stuff in it. DH really likes it.
Red wine braised short ribs - they're so yummy. I usually serve them over polenta.
