I don't have much because we're going out to dinner for FIL's birthday tonight, and I fly out to Chicago on Wednesday to see my BFF and finally meet her 2 month old baby boy!
However, tomorrow night I am making Mongolian Beef with broccoli and brown rice.
Mon - Spaghetti with tomatoes, black olives and feta, salad
Tues - Leftovers
Wed - Chicken Franchese, Roasted Potatoes, Broccoli
Thurs - Baked Eggplant and Zucchini, Bread
Fri - Leftovers or Out
Sat - Beef Enchiladas, Black Beans, Corn Salad

This week is kind of nuts. DH has tons of meetings in the evenings and we leave for Palm Springs on Friday (well, flight is early saturday morning, but we head to the city friday night).
The only thing I know for sure I'm making is a Chilli Lime Pork Tenderloin - anyone have any ideas for side dishes for it?
Monday - leftover pear and blue cheese pizza
Tuesday - BBQ pork in the crockpot, baked potatoes, veggies
Wednesday - Chicken Pasta Alfredo, broccoli
Thursday - Leftovers
Friday - Chicken stirfry
Yes! This is one of my favorite sides, and it should compliment the pork well. I don't know if you guys have Chipotle in Canada, but this is a copycat recipe of their rice, and it's SO good! Cilantro Lime Rice.
