Tips for best results?  I'm making them for the first time for MC's birthday party on Saturday.

Can I make them a couple nights before?  How do they store best?  What's the best ratio of cake to stick stuff to hold em together?  What's your favorite sticky stuff?

  • You can definitely make them a couple of nights before. The way I usually do it is a 2 night process make the cake, mix with buttercream frosting (For a whole cake, I generally use 2-3 large spoonfulls of frosting and gauge it from there) and roll into the balls. Then I'll put them in the freezer.

    When I'm ready to dip them in chocolate, I pull them out a few at a time from the freezer. (The cake won't freeze fully because of the frosting).To melt my chocolate, I use a little crock pot because that keeps it consistently warm/melted.

    My favorite sticky stuff is a pretty tough question ;) I like to use buttercream frosting and the storebought stuff is fine for the pops. That's what Bakerella uses! I switch it around depending on if I'm doing cakes that week and I have it handy.

    After I make the pops I put them in a styrofoam block and stick it in the fridge for a bit, just to help even out the temps (from freezer to hot chocolate to cool fridge). I wrap them in little bags and keep in the fridge until the day of the event and then pull them out a few hours before to get them acclimated to room temp.

    You can eliminate the fridge step, just keep an eye on them as they're drying in case of a few cracks, you can re-dip them and they'll be fine. I prefer to store them in the fridge because it's effing hot in Florida.

    I generally use Mercken's/CK Products melting chocolate but I've used the Wilton stuff you can buy at the craft store for special colors. Watch your colored chocolates because they tend to be a little thicker and may need a little oil to make them thin enough for dipping.

    I predict my attempt will be an epic fail and I'll be baking cookies Friday night, but I'm OK with that.  I want to give it a try.

  • Don't psych yourself out, they'll be great!  The spacing it out helps it seem a lot shorter.  When I make them (today, for example) I generally make 3 or 4 cakes and then have 200 cake pops on standby.  Then I just have to grab and dip.

    Make sure you dip the stick (hehe) in the chocolate a little bit before you insert it in the pop (this whole sentence sounds dirty).  Then once you dip the pop, tap the stick on the side of the container to get rid of excess chocolate.  

    They'll be great!  I expect an update/pictures next week!

    Correct.  Just keep the balls contained.

    I could keep going with this dirty cake talk but I have things to frost.

  • If I'm going to be making the pops right away, I'll poke holes in all of them, squirt in a little chocolate, and put the sticks in and freeze.  If I'm stockpiling cake balls, no hole/stick.

    After you dip, let as much extra covering run off as you can.  Depending on the consistency, you may need to twirl the cake pop to prevent runs or uneven sides.

    Overall, they're pretty easy.
