Does anyone have a good recipe for bok choy?

I know several of you have lived in China, so I thought I'd ask here.  I got a whole bunch of it for peanuts at the market of the weekend and want to make it tonight.

  • DH and I would heat some olive oil and a bit of garlic and then toss in the bok Choy. It doesn't take too long to cook. I'm trying to remember if we blanched real quick before tossing it with the olive oil and garlic. It's been so long since we've done it.

  • I make this recipe a lot and it calls for bok choy.  It's an easy recipe to mess around with.  DH is vegetarian so I make it without seafood and add chickpeas and tofu, altho it's definitely better with the fish sauce (have to sub soy sauce if he's going to be eating it).
  • I sometimes just add it to stir fries along with everything else.

  • Thanks!  I ended up just saut?ing it with some grated ginger, olive oil, salt and pepper like gblake suggested.  I think I'm going to try some of these with the rest of my bok choy tomorrow.
  • We usually steam or boil it for a couple of minutes and serve with a little bit of toasted sesame oil or soy sauce.
