  • Fajitas, no tortillas, served over brown rice.

    We had roast chicken and salad last night.  it's so easy and so good, and it only needs about an hour or so to cook with minimal prep.

  • I think I'm just picking up some scallops from the grocery store and throwing them in the oven with bread crumbs, butter and a little lemon. Then I'll make some rice and roast brussels sprouts. Walla. Yesterday was bolognese sauce. Monday was a nice roast chicken and broccoli.

  • I'm making Skinny Taste's Kalua Pig.  Except I realized this morning as I was stabbing the roast in prep that I bought beef and not pork.  So I guess my version is Kalua Cow.

  • I made some asian lettuce wraps last week with turkey. But they were too annoying and messy to wrap, so I just ate them over rice with a fork.

    I seriously have been thinking about these since I made them.  I ate the leftovers during the Super Bowl, and I still want to make them again ASAP. 
    I should mention I realized I read the ressypee wrong when I made it and put in 1/2 cup of Buffalo sauce instead of 1/3.  I'm guessing that's why it was a bit hot for me to handle.

  • I think I'm having dinner out tonight with MIL, but last night we did these chicken, spinach and asiago sausages that I get at Sam's and a mixed green salad.  I'll also be having that for lunch today.

    How do you roast said chicken? Is this chicken breast or a whole chicken? Or miscellaneous chicken parts? This sounds tasty.

  • That actually sounds kind of good to me Mod.  Random, but good.  On a bun at least.  I was in the mood for some "comfort food" this week so I made the Mexican lasagna I made Friday night at the Shoar.  I just sub lean turkey and light cheese in this recipe. http://tastykitchen.com/recipes/main-courses/mexican-lasagna-8/

  • Tonight we're having chicken and broccolini.  Maybe some brown rice.

    Last night we had turkey tacos, and tomorrow night it's terriyaki pork tenderloin and carrots.

  • Christin if you use the morningstar spicy blackbean and fry the egg either overeasy or sunnyside up it is really good. Mr. Mod and I have made a radical change to our diet and are eating vegetarian about 75 - 80% of the time. We won't cook any meat in the house for us (other than fish on occasion), and we're only eating meat for special things that involve other people (like parties or when I did the weekend away with the girls). That's a long way of saying that I am eating more eggs as it is a lowcal way for me to get protein in. On top of a veggie burger they (oddly enough) sort of take the place of mayonnaise and cheese when the yolk breaks.

  • I think tonight I'm going to be lazy and Mr M is making omelets with mushrooms, broccoli, peppers and onions. 

    Lately we've been having a lot of fajitas (peppers, onions, broccoli, cauliflower, squash) with scrambled eggs.

    Also mashed potatoes with the fajita mix minus the squash, plus cheese. I still need to find a good side for that one.  

    Or black beans, chunked roasted sweet potato and plantains over rice. With a fried egg, salsa and ripe avocado (when I can find a decent one).  

    One thing I like making when I'm in a rut is crepes. That always gets my creativity flowing.

  • I'm making breakfast for dinner tonight.  Eggs and sausage, and an as yet undetermined vegetable.

    Last night we did baked potatoes and steamed broccoli, and Brett made himself a steak too.

  • Tim's having leftover pot roast (I decided last night I am NOT a pot roast fan. Everything just ends up tasting the same!). I'll probably make some whole grain pasta and sauce. And a glass of wine. These past 3 weeks have been a bear at work.

    We're making the enchiladas tomorrow! Has anyone else tried the Bubble Up Enchiladas on Pinterest? They're really good.

  • Tonight leftovers from an Italian restaurant down the street. They've been in our freezer too long and we need the containers because we're cooking at home more often to save money.

    Tomorrow will be salmon packets on the grill so long as I can manage to get a lemon.

    Friday no idea yet, but I really want something like enchiladas or mexican "lasagna." We don't have the ingredients for that so I'm sure it'll be our basic grilled/baked meat (rotaion of chicken, pork, steak, and salmon) and some sides.

    Chicken with Peanut Curry Sauce

  • I made Italian Wedding soup last night. It's one of our favorites and it's soooo quick and easy, especially if you have a Trader Joe's nearby. And it's quite healthy, the TJ's turkey meatballs are very lowfat.

    INGREDIENTS

    2 lbs (2 packages) TJs turkey meatballs

    1 Tbsp extra virgin olive oil

    1 large onion chopped

    2 cloves crushed garlic

    1 cup diced baby carrots

    6 cups chicken broth

    4 cups water

    1 lb roughly chopped or ripped up greens (I use the TJs package of Southern Greens or Swiss chard and spinach)

    1/2 package short noodles (I use whole wheat rotelli)

    1/4 cup fresh parsley, chopped

    1/2 cup grated or shredded Parmesan cheese

    DIRECTIONS

    1. Heat olive oil over medium-high heat in a large pot. Add onions, garlic, and carrots. Cook for 5 minutes.

    2. Add chicken broth, water, and meatballs. Bring mixture to a boil. Add noodles. Reduce heat and simmer for 20 minutes or until noodles are almost done.

    3. Add greens and simmer for 5 minutes longer.

    4. Ladle into soup bowls. Garnish with parsley and Parmesan cheese.

    The idea of an egg on a burger intrigues me greatly. 

    I've been so busy lately,  I am so lazy when I get home. The other day I just wanted to make some lipton chicken noodle soup, but wanted protein in there too. So when it was just about done simmering on the stove,  I cracked a couple of eggs in there and whisked them around. It was delicious and I am now reminded that  I want to do that again.

    Thanks Moo. I have not played on Pinterest in a while, this will inspire me to get back there. I am over the moon that Mr. Mod has finally agreed to this eating style. It's much easier for me to lose weight this way and I don't like meat that much anyway.

    I love Zatarain's products! Their Jambalaya is one of our go to meals. So yummy and super easy. I make it even easier by either throwing in pre cooked chicken (Perdue shortcuts) or leftover chicken along with some andouille sausage. If I have some frozen shrimp on hand, I'll chuck them in too.

    I made a grilled peanut butter and banana sandwich on my George Foreman yesterday. WOWZA. 

  • Thanks for all the healthier recipes, guys.  All the beer and cheese I've been consuming since moving to Wisconsin is starting to catch up with me, so I'm back to eating better this week.  I have to stop living like I'm on vacation.

    Christin, since you are WeWa master and I loved your enchiladas at the shore, would you mind posting some of your other favorites?
