So with our little one's grand apperance quickly approaching, I am wanting to stock pile some meals in the freezer that are easy to make and that I can throw in the freezer and easily heat back up in the oven. My MIL will be here for 6 weeks, roughly 2 before and 4 after baby gets here, and SIL and neice will be here roughly a week after baby gets here for 1 week. Needless to say I don't want to have a frozen pasta meal every night. D is pretty picky when it comes to veggies, so minimal veggie recipes would be great!
Here is what I have planned so far: Bri's baked ziti, lasagna, stuffed pasta shells, and manacotti. See nothing but pasta....HELP!

I've seen this website going around Pinterest for awhile. The receipes on here look good and I believe there are quite a bit non pasta.

You can prepare smoothies in advance. It's been all over Pinterest. You put your yogurt in a muffin pan and freeze the "pucks," put them in a freezer ziploc with some fruit, so you have smoothie packs.
You can freeze egg mcmuffin type things, too. if Jimmy Dean can make it happen, so can you!
Do you still have that recipe for the cheesy chicken and stuffing casserole? That freezes well. I also have a great recipe for chicken nugget-type things that freeze awesome... serve with BBQ sauce or ranch. I'll try to remember to find it when I get home if you're interested.

Hamburger and tater tot casserole.
1 lb browned meat cooked with 1/2 an onion.
Mixed with 1 can of condensed cream of whatever (I used onion).
Top with frozen tots. Freeze
Thaw and put a bit of cheese on top to bake.
It's not bad.
I also flash froze some chicken bites. Chicken dipped in half buttermilk/half dijon mustard and coated with panko. Deliciousness on a plate!
Enchiladas too! Those seem to freeze well.
Good post! I've been making a mental list of foods I can make. Before a surgery this summer, I made a few freezer meals:
taco soup
broccoli cheese soup (have with sandwiches for dinner)
spaghetti sauce (so all DH had to do was cook noodles)
chicken burritos (shredded chicken, black beans, rice, cheese, seasoning)
Good idea. I may make some muffins and breads and freeze them for easy breakfasts and snacks.
We are having a girl and I am thrilled about it. I can't wait for her to get here. We decided on Evelynn. I really like older classic names. How about you??
