I have a weird lunch today. We had spaghetti squash last night, and I have leftover homemade meat sauce, but no leftover squash.
I was going through my fridge, wondering what to put the sauce over, and we had a small amount of raw collard greens left from dinner the other night. So I sauteed those and put the meat sauce over it. It's pretty good, just hoping it's enough to fill me up!
I do have celery, cucumber slices, and string cheese for later...
