What should I make for dinner?
I took 1 lb of ground beef out of the freezer to thaw last night, and I have no idea what to do with it.
So far this week we've had Quesadilla Caserole (chicken, beans and corn mixed w/ BBQ sauce and baked), Quesadilla's, and Kraff Dinner (Mac & Cheese, so nutritious, I know).
All I can come up with is pasta w/ meat sauce or tacos.
What do you guys suggest???

That was Sunday's dinner! I think we've hit our bean quota for the week. :P
I think I'm leaning towards tacos. We have tortillas, cheese, salsa and sour cream. Oh, and some red onion, so really I just need taco seasoning and some bell peppers. And lettuce. Can't forget lettuce. I keep forgetting the lettuce.

I like these 'impossible pies', made with Bisquick. You can adjust the ingredients to be somewhat healthy.

Les, I have to admit, the picture of that pie thing just doesn't turn my crank. I think I need more veggies than that too.
Neptoon, good suggestion. But, we are making lasagna next week (our Valentines thing) and I think I might be pasta'd out. It is an option though.
eeeeeeeeeeeeeva, yeah, beans. I did kidney beans and chickpeas in the chili on Sunday, then black beans in the Quesadilla casserole thingy. It was a stinky few days at our house.

I make this often except subsitute rice for potatoes. Russ and the kids absolutely love it.
Stuffed peppers! That would have been awesome. I never think to do them with meat because the only recipe I've ever made is stuffed with quinoa and spinach (and topped with this awesome pesto, I need to make those again), but I keep meaning to try them with meat.
Next time for sure!

I made my mom's Spanish rice dish tonight. I don't know how "Spanish" it is considering we are Irish but its really yummy.
1lb ground turnkey
1 small green pepper
1 small chopped onion
1 can of tomato sauce
2 cups of cooked rice
Basically brown the turkey in a skillet, add the veggies saut? until tender like 10 min I'd say. Add in the sauce and rice. Season with S&P, all done.
