H and I have never been and are thinking about going this weekend. Yes, we pretty much do everything last minute.

Anyway as far as places go to stay in Vancouver, BC I'm not sure. I do know that if you are looking for something to do Granville Island is super cool! Tons of little shops - it's a market.

a place to stay or something to do? i pretty much never stay there because it's so close to home. but i *have* stayed once at a holiday in on granville. granville is where the "night life" is..but h and i are so not into nightlife that it didn't matter lol.
if you're looking for something to do, the aquarium there is *really* good (there's bogo coupons for them pretty often, so google it if you decide to go). food-wise, go to shabusan (there's 3 locations) for all you can eat korean bbq and sushi- REALLY good.

There's nothing in Vancouver, WA to speak of except Portland being right across the river, afaik.
But -- Aw, man, I love Vancouver, BC.
No clue on places to stay; we've generally stayed with friends when we've gone and actually stayed the night.
For stuff to do, in addition to what everyone else has mentioned, their science museum is AWESOME if you're into that kind of thing.
And I strongly, strongly, STRONGLY recommend Clubhouse Sushi ( http://www.clubhouserestaurant.com/ ). We were in Vancouver for a week during the Olympics, hit that restaurant maybe three times, and never saw fewer than 3-4 members of Team Japan there. If their sushi's good enough for Team Japan, it's certainly good enough for me!
D is from Vancouver so a lot of our dating was done up there.
I don't really know places to stay as we have home there, but Sutton Place looks /gorgeous/ and we took a 'mini-vacation' the weekend of our anniversary and had the fortune to stay at the Pan Pacific there. Gorgeous, even with the power outage that weekend.
As for place to eat?
It really depends on what kinds of foods you like. Any particular ethnic stuff? One of my favorite Taiwanese cafe places is in Richmond and is called Pearl Castle; really good bubble tea an really good cafe food.
If you like Indian food, Vij is something to try. Japadog has an actual storefront now but their original cart is in front of the Sutton Place Hotel. If you like French food, Le Croc is pretty good.
If you want something nice for brunch, Cafe Medina in Gastown is pretty superb and they have this really yummy lavender mocha and hot chocolate, as well as an 'appetizer' of miniature Belgian waffles with various dipping sauces.
I've also liked Provence Marinaside for brunch, my D isn't much of a fan.
Our old standby for date nights used to be Bin942 (which is closed now) but their Yaletown location Bin941 is still open. I've heard mixed reviews about it, but they have this amazing chocolate fondue dessert for two with housemade doughnuts and it's just really yummy. Their hanger steak and fries were really good and I've always loved their mussels.
Things to do: definitely hit up Stanley Park, esp. if it's the first time you're there. It's too early in the year for QE Park but that's beautiful too in the summer. Granville Island is a great place to visit, but try not to drive there/park there as parking is a pain in the butt. There's a really great craft sake shop there, where the owner is a master sake distiller? Taster? I don't even know what to call him. One of my favorite cake shops is on the west end and is called Sweet Obsessions. (http://www.sweetobsession.ca/cakes/)
