    What veggies do you usually use in your fajitas?

  • Pasta with Broccoli

    INGREDIENTS

    4-5 cups broccoli florets and tender leaves
    3 plump cloves garlic, minced
    2 Tablespoons olive oil
    1 pound fresh or frozen cavatelli (not the ricotta) or a pasta noodle of choice

    Grated parmesan to serve

    **I usually add more olive oil**

    PREPARATION:

    1. Bring a large stockpot of salted water to the boil. Blanch the broccoli -- cook more than al dente stage, but not to a mush. Remove and shock in ice water to stop cooking. Keep water at a simmer. Use the same water to cook cavatelli.
    2. Heat a large saut? pan with enough capacity to contain all of the sauce, broccoli and pasta over medium. Add the olive oil and garlic and cook over low heat, just to flavor the oil with the garlic. The garlic should not burn.
    3. Meanwhile, cook the cavatelli per instructions al dente. Drain into a bowl, and add broccoli, some cheese and the garlic oil. Toss to combine and serve with plenty of grated parmesan on the side.

     

  • grilled cheese and tomato soup is my favorite meatless meal ever... I also want to try to make fish tacos at home this Lenten season. We do fajitas too with just peppers and onions. Veggie Pizza?

  • Pear and blue cheese pizza, spinach alfredo pizza, cheese tortellini with alfredo or pesto, grilled cheese, omelets with veggies and cheese, pancakes, pasta with veggies (we're boring and usually do broccoli, cauliflower, and carrots).

    Different color peppers (whatever shoprite has that week), onions, tomatoes, mushrooms, garlic, and anything else that looks like it may be good.

  • We tend to do cheese pizza, mac and cheese, haddock filets and broccoli, cheese raviolis, and grilled cheese and tomato soup.  Lots of cheese hahah :)

  • Check out oh she glows blog. It's a vegan blog, but she has great meatless recipes. We just had avocado cream sauce pasta at my friend's place from her blog and it was fabulous!

    When I was eating dairy, we did veggie lasagna, stuffed bell peppers, cooking lights couscous bake, risotto with seasonal veggies.

    Are you eating fish/shellfish? If so, eating well has an awesome shrimp Mexican bake (I can't remember the exact name, but I have it on my laptop if you want it). It's spicy and wonderful!

  • Cheese ravioli with sun dried tomato Alfredo sauce

    Steamed veggies of several varieties

    Any kind of pasta with zucchini and squash instead of meat (which I never make because M turns his nose up at it)

    Baked potato and salad bar

    Hmmm.. Chili could also be meatless as well as several varieties of soup.

  • I cook vegetarian a lot. Spinach artichoke lasagna is a favorite, cheese enchiladas, garbanzo bean stew, vegetarian Reuben's to name a few.

    OK! I was actually able to track it down on-line. I love it!!!

    Our low-calorie, low-fat lasagna recipe will satisfy any comfort-food craving. Chow, Bella!

    Leaner Lasagna

    Makes: 6 servings

    Ingredients
    2 teaspoons olive oil
    1/3 cup chopped onion
    21/2 cups zucchini, sliced
    2 cups sliced fresh portobello mushrooms
    1 cup fat-free ricotta
    3 tablespoons finely shredded Parmesan
    1/4 teaspoon black pepper
    6 whole wheat no-boil lasagna noodles
    2 cups prepared pasta sauce
    1 cup shredded part-skim mozzarella
    1/2 cup chopped, seeded tomato

    Directions

    1. Heat the oil in a large nonstick skillet over medium-high heat. Add the onions, zucchini, and mushrooms; heat 5 minutes or until tender, stirring. Remove from heat; set aside. In a small bowl, mix the ricotta, Parmesan, and pepper.

    2. To assemble, place 3 lasagna noodles in the bottom of a 2-quart rectangular baking dish. Spoon half the ricotta mixture over the noodles. Top with half the veggie mixture, half the pasta sauce, and half the mozzarella. Layer with remaining noodles, ricotta mixture, veggie mixture, and sauce.

    3. Bake, uncovered, in a 375-degree oven for 30 minutes. Sprinkle with tomato and remaining mozzarella. Bake 5 minutes more or until heated through. Let stand for 10 minutes before serving. Cut into 6 pieces.

    Nutrition facts per serving (1 piece): 251 calories, 17g protein, 32g carbohydrate, 7g fat (3g saturated), 7g fiber

  • We do a lot of seafood for lent but then again I live in NOLA. Fried catfish, fried shrimp, boiled crawfish, boiled shrimp, boiled crabs, fried softshell crab. We just boil everything in crab boil (I think) which you can buy at the store and lemon and garlic. Eggplant meals are also good for lent like eggplant Parmesan, etc. Or other pasta dishes with seafood like shrimp Alfredo. One restaurant does a fried crawfish Caesar salad which is delicious. Shrimp and corn bisque is yummy too. DH suggests cauliflower soup.
