  • Beecher's white cheddar! Or a mix of white cheddar and smoked gouda.

    Or my all-time fave (hello calories)... brie, fontina and a dash of truffle oil.

    Mmm... now I want to make mac and cheese :)

  • H and I just use shredded mexican blend and shredded cheddar or colby. I'm gonna try Merrilee's though! Mine is a poor man's version, lol! But it's good!

  • I use feta, lots of feta, with cream cheese and a little mozzarella or cheddar jack, then I top it with lots of mozzarella or cheddar jack (whichever you used in the macaroni)! So good! I havent made it for a while though Sad

    This is pretty much what we do, but we add a bit of dried mustard cause it helps round out the cheesy greasiness.

    I'm impressed. I'd never have thought of making mac'n cheese with brie or other cheeses. Does it melt right? What kind of mac'n cheese does it make? Melty, gooey, bakeable? Drier?

    I've made it with "fancy" cheese before when I have leftover bits from a party. I really like mac and cheese where it's realy gooey. I think when you use the nicer cheeses, the flavor is awesome but it tends to be a little drier in my opinion. When I stick mine into the oven it looks like cheese soup but by the end, the pasta absorbs a lot of the liquid or it cooks off b/c it just ends up perfectly.

    i can't find that post where you told me how to make your stuff.. i have a recipe that i'm thinking of sorta following becasue it sounds like yours.. can you tell me again? i'm such a jerk! i'm sorry.

    I am not a traditional mac and cheese fan either but when we were on a cruise I tried their mac and cheese and it was sooooo good! So I tried to recreate it and came up with the combination of cheeses above. H & I both love it!

    FREAK!!!! just joking.. but omg! i LOVVVVVVVE it. and it never gets made here either because it's not on the healthy menu.
