Beecher's white cheddar! Or a mix of white cheddar and smoked gouda.
Or my all-time fave (hello calories)... brie, fontina and a dash of truffle oil.

jumped ship to the new and improved nest. back to TB for baby boards.
I use feta, lots of feta, with cream cheese and a little mozzarella or cheddar jack, then I top it with lots of mozzarella or cheddar jack (whichever you used in the macaroni)! So good! I havent made it for a while though

This is pretty much what we do, but we add a bit of dried mustard cause it helps round out the cheesy greasiness.
I'm impressed. I'd never have thought of making mac'n cheese with brie or other cheeses. Does it melt right? What kind of mac'n cheese does it make? Melty, gooey, bakeable? Drier?

I am not a traditional mac and cheese fan either but when we were on a cruise I tried their mac and cheese and it was sooooo good! So I tried to recreate it and came up with the combination of cheeses above. H & I both love it!
