Fennel?

I never know what to do with fennel, and I now have three organic fennel bulbs waiting to be cooked. Any suggestions on what to do with it?

  • I love fennel and eat it regularly when it's in season.  

    I just made a fennel salad last night (thinly sliced raw fennel, tomato, lemon juice, fresh basil, oil, salt, pepper).  

    I also like to sautee slices of fennel with onion (optional: chicken stock, and a touch of balsamic vinegar at the end) and serve it as a side dish or toss it with pasta. 

    I also like to roast it together with other vegetables (carrots, beets, onions, garlic, winter squash, ...) 

    I've tried it in stir-fries and omelets, and it always comes out great.

    I was going to say I love it in a salad. It's really good for digestion and easy an upset stomach. And all these other ideas sound fantastic!

    mmm, this sounds really good. I might have to try that tomorrow. I ended up roasting it with a little balsamic vin. and olive oil tonight, but I still have another bulb.
