Grated Butternut Squash Gratin (serves 4)

Preheat oven to 375F. Rub a 10-in gratin dish with:
- 1 clove garlic, crushed
Butter the dish. Chop what is left of the garlic and combine it in a saucepan with:
- 1-1/2 cups milk or half-and-half, scalded
Let stand. Slice neck from:
- 1 large butternut squash
You should have about 12 ounces. Peel it, then grate on the large holes of a 4-sided grater or in a food processor. Toss shreds with:
- 2 Tbls all-purpose flour
-1 tsp salt
- Ground black pepper to taste
- 1/2 cup shredded fontina or Guyere cheese (optional)
Spread the squash in the gratin dish and pour the hot milk over. Cover and bake for 40 minutes. Remove the cover and continue baking until all the liquid is absorbed and the top has begun to brown, about 20 minutes more. Garnish with:
- Chopped fresh parsley or chervil
I'm going to make mine partly ahead of time. Bake it through the 40-min part, then cool, keep in fridge, then finish baking the night we eat it. Don't have the type of cheese they call for so am going to use some shredded Irish cheddar.
