Ladies in the kitchen...

Hello,

 I am going back to work- and so I am going to have to scale back on my cooking time. I feel like we are eating the same old things over and over again every week- my menu planning is getting....zzzzzz boring!! 

What are some of your favorite quick,easy,semi healthy haha, meals to make during the week? please share!

  • This week I've used my crockpot twice and it's been so nice to come home and dinner is pretty much done!  Earlier this week I made a pork roast and tonight it's chicken & dumplings. 

    Some other easy, quick and somewhat healthy dinners I make are:

    Pork chop, rice & veggies

    Tacos (taco salad for me) or fajitas

    Stirfry

     

  • Chicken Fried Rice so yummy and with brown rice its pretty healthy.  You can also add a bunch of veggies instead of or in addition to chicken.  

     

    Cajun Chicken Pasta is another good go to for me.  

     

    I agree with pp though a crockpot is a huge time saver.

  • I love our crockpot!  Just started taking a whole chicken (frozen!!!) and putting it in on low for 8/9 hours. It's delicious and super tender when it's done

  • I love my crock pot lately. Here's some of my favorites. The pork chops are awesome. And the Italian Chicken. 
  • Another vote for the crockpot. Cook a whole chicken with just some salt/pepper or whatever seasonings you like, and a dash of stock or wine or water. That's dinner one night. Then, you can make chicken soup with the leftover chicken. There's at least two dinners with very little prep time!

    Ribs are also amazing in the slowcooker. Just a dry rub is all you need on those. Put the sauce on when they come out of the crockpot.  Or chicken thighs...season with salt, pepper and cumin, add 1/4 cup of salsa, before serving shred the chicken and add another 1/4 cup salsa. Viola...tacos or burritos!

I think I need to start using my crock pot more- I know it seems a little neurotic but I always am just paranoid about leaving it on when we are not home- I think its because mine is a few years old now and I have had a problem or two with it. Perhaps I need to invest in another and give the crock pot cooking a shot!
