I just finished lunch so now I have to think about the next meal.

I'm making chicken pineapple stir fry with rice. It's a new recipe so here's hoping we don't need to order pizza!

    I am making chili from my mom's recipe. it has elbow pasta in it.

  • we picked up some chicken breasts stuffed with bleu cheese and bacon from the meat counter last night that we'll make with some kind of veg. mmmmm.

  • I have been eating horribly lately because we're so busy.  I need someone to post their weekly meal plans and then just copy them.  That would make my life easier. 

    Pineapple chicken stir-fry sounds so good right now.   I have to go to the grocery store this afternoon.  Recipe please?

  • I also plan to make spinach tortellini soup this week. It's super easy. Just chicken broth simmered with garlic and shaved carrots and then you cook the tortellini separately and add that and spinach in at the end just long enough to wilt the spinach.
  • Barbecue pulled pork is cooking in the crock pot now and then I will probaby make macaroni and cheese and salads for sides.
  • I'm having leftover pulled pork sandwiches with mashed potatoes and brussel sprouts.

    Uh oh. I hope your luck doesn't rub off on me.

    The recipe is:

    Drain 1 can of pineapple chunks and reserve 1/4 cup juice. In a small bowl stir together the juice, 1/2 cup water, 1/3 cup soy sauce, 1 tablespoon cornstarch, 1 tsp crushed red pepper, and 3/4 tsp garlic powder (I'm going to use fresh); set aside.

    Cut 1 pound boneless, skinless chicken breasts into strips. Combine with 1 tablespoon corn starch and 1 tablespoon soy sauce in a medium bowl. Heat 2 tbsps vegetable oil in a skillet over medium-high heat. Add chicken and stir-fry until lightly browned. Add 2 cups broccoli florets, 3/4 cup red bell pepper chunks (I'm using green), and 1 small carrot (thinly sliced diagonally) and stir-fry until tender. Add soy sauce mixture and cook until sauce boils and thickens. Stir in pineapple chunks and heat through. Serve over white rice.

    You're supposed to add fresh ginger when you add the veggies but I don't have any, so I'm just going to add some powdered ginger to the sauce.

  • Sweet potato and black bean burritos.  I made the filling yesterday so I just need to shred some cheese and put them together tonight.

    It was just the wrong mix of flavors. it just didn't gel as a cohesive dish.

    I fell off the WW wagon with a resounding thud this weekend, killed my efforst for the whole week.  Went WAY over the weekly allowances and activity points and went about 10 over altogether.

  • I'm the late librarian tonight, so dinner is stuff I have in the fridge/freezer at work:

    carrots and hummus

    quinoa and black bean salad

    spicy black bean burgers

    maybe a spinach salad if I'm still hungry

    Sorry you are feeling overwhelmed.  The renovation will be done soon and you will be back home in your own element in no time.

    Make the zucchini.  It's freaking delicious with or without sauce.

    I can't link to the recipe because it has malware.  but you basically slice up the zucchini, season it (it says to use that garlic bread seasoning mix from Sam's.  We just use garlic salt, pepper, whatever we feel like) and broil it for like 15 minutes.  Then cover it with mozz and throw it back in until the cheese starts to brown.  It is heavenly.

  • I made the weight watchers "bubble up enchiladas" I saw on Pinterest.  Actually, I'm not sure its a WeWa recipe.  Just listed the points.  Anyways, it was ridiculously easy to put together, which has been my goal lately.  I can't really count on having the energy after work to cook lately.  I picked up a lot of frozen stuff at TJ's on Friday, so I don't anticipate trying a ton of exciting recipes in the near future.  Better than fast food, right?
