I am making chili from my mom's recipe. it has elbow pasta in it.
I have been eating horribly lately because we're so busy. I need someone to post their weekly meal plans and then just copy them. That would make my life easier.

The recipe is:
Drain 1 can of pineapple chunks and reserve 1/4 cup juice. In a small bowl stir together the juice, 1/2 cup water, 1/3 cup soy sauce, 1 tablespoon cornstarch, 1 tsp crushed red pepper, and 3/4 tsp garlic powder (I'm going to use fresh); set aside.
Cut 1 pound boneless, skinless chicken breasts into strips. Combine with 1 tablespoon corn starch and 1 tablespoon soy sauce in a medium bowl. Heat 2 tbsps vegetable oil in a skillet over medium-high heat. Add chicken and stir-fry until lightly browned. Add 2 cups broccoli florets, 3/4 cup red bell pepper chunks (I'm using green), and 1 small carrot (thinly sliced diagonally) and stir-fry until tender. Add soy sauce mixture and cook until sauce boils and thickens. Stir in pineapple chunks and heat through. Serve over white rice.
You're supposed to add fresh ginger when you add the veggies but I don't have any, so I'm just going to add some powdered ginger to the sauce.
What was wrong with it, if you don't mind my asking?
It was just the wrong mix of flavors. it just didn't gel as a cohesive dish.

I'm the late librarian tonight, so dinner is stuff I have in the fridge/freezer at work:
carrots and hummus
quinoa and black bean salad
spicy black bean burgers
maybe a spinach salad if I'm still hungry

Make the zucchini. It's freaking delicious with or without sauce.
I can't link to the recipe because it has malware. but you basically slice up the zucchini, season it (it says to use that garlic bread seasoning mix from Sam's. We just use garlic salt, pepper, whatever we feel like) and broil it for like 15 minutes. Then cover it with mozz and throw it back in until the cheese starts to brown. It is heavenly.
