As I've stated today is H's birthday. I want to cook him a meal but I'm not a very good cooker. The recipes I do know seem so repetitive since those are the only ones I can cook (chicken enchiladas, this meat and potato w/spicy tomato sauce recipe, and anything in a box).
Can someone pass along an easy recipe? I can pick up the ingredients when I get off of work.

A few weeks ago I made this meal and MH said it was the best meal I'd ever cooked:
Honey Chicken (If you don't have time to put it in the crock pot, you can make it in 30 minutes using the instructions at the bottom of the recipe). I made a fried rice and served the chicken on top.
Curried Sweet potatoes (if curry isn't your thing, scoop out the inside of the sweet potatoes and mix in cream cheese, brown sugar, cinnamon, and nutmeg. Then, return to the skins and bake at 425 for 5 minutes... sweet and yummy.. top with marshmallows if you're feeling bad)
Roasted Asparagus

I am with Missus on the roasted asparagus - easy and delicious. Roasted potatoes are equally as easy - cut them into equal size pieces, toss in olive oil/S&P/thyme, bake til soft inside.
Main dish ideas:
Chicken parmesan
Filet (you can wrap it in bacon, do a quick sear on the stove, then pop it in the oven)
Pork tenderloin - you can buy them pre-marinated, and you just dump it in a baking dish and throw it in the oven. They're yummy.

I sometimes like to do kabobs using a recipe like this, and substituting whatever veggies between the meats that you like. This one calls for chicken, but I have also done bacon wrapped filet pieces or lamb, depending on what is on sale or looks good. If you don't have a grill top you can just put in the oven for 8 mins at a time at 425 or 450 and keep turning them until they are cooked.
Or, this alfredo pasta dish is not too difficult and you can also use shrimp, chicken, whatever instead of sausage.

He likes different things and since he does the cooking in the house whatever he's in the mood for he cooks it.
I know, I'm no help at all.
We both like spicy food so I've been looking for some Thai recipes.
The other night I made these deep fried chicken legs and then smothered them with Sweet Chilli Sauce ad baked them they were so good
Italian Sausage is pretty easy. It can be served with pasta or potatoes. I brown it in olive oil, in a hot dutch oven. Then add onions, garlic, green/red peppers and white wine and let simmer about 5 min. Add a little broth, cover and let cook on low about 1 hr. {You can transfer to an oven safe dish and bake at 350 for 1hr if you dont have a dutch oven}
If you cook it with potatoes, I use new potatoes and add them in the same time as the peppers. If you make pasta- just make it right before and serve the sausage over pasta. Its good with marinara, alfredo or pesto!
Or Jambalaya since its near Mardi Gras. I buy the box of Zatarain's Jambalaya Rice Mix and make it according to the directions. While thats cooking I dice either andouille sausage or kielbasa and cook it in apple juice. I usually get either Eckridge or Johnsonville. Then just serve the sausage over the rice. Corn bread would go good with this but I've never attempted it.
Edit~ The jambalaya is spicy if you both like spicy foods!
