WFD? For the day and for the week.

We ate out a TON last week, so I'm trying to go into super wife mode.  Here is what I have planned for dinner this week.

Mexican casserole (pinterest) w/ a green salad

Hamburgers & sweet potato fries 

Crockpot french dip sandwiches w/ broccoli salad

Chicken fajitas with spanish rice

Leftovers one night & for lunch Saturday.

What do you have planned?

  • I looooove sweet potato fries. We had them yesterday with lunch.

    I just went grocery shopping yesterday I can barely remember what we're having this week...

    Tonight: Bora Bora Fireballs (meatballs) and some sort of vegetable

    Chicken sausage, Sweet Potato & Apple Hash

    BBQ Chicken "Fried Rice" (<--- cauliflower rice)

    There was more, but that's all I can remember off the top of my head!


  • Last night: spaghetti w/meat sauce, salad

    Tonight: Panko-parm chicken, brussels sprouts, rice

    Rest of the week: Zatarain's (Fat Tuesday lol) and salad, Bean quesadillas with chips and salsa, grilled skirt steak and zucchini, and roasted chicken with mashed potatoes and a salad.

    Friday we have a wine and cheese party to go to for a birthday.

    If you don't have coconut aminos, you can use soy sauce.

  • I'm meeting my mom in OKC tonight, so no telling what we'll be eating - maybe Ted's [which, unfortunately, doesn't sound appealing at all right now].

    Tomorrow: spaghetti with meat sauce

    Wednesday: pork chops with mashed potatoes

    Thursday: some sort of chicken [maybe grilled chicken sandwiches or something]

    Friday: Panera for some soup and sandwich action

    I'll probably try to crockpot it over the weekend so I won't have to cook a ton.

  • We made homemade meatballs, spaghetti noodles, and sauce when SD was here on Saturday (that girl loves to be in the kitchen - oh my!) - we have tons of leftovers so we will have that this week, probably a breakfast for dinner (waffles, sausage, bacon, eggs), hamburger patties, I might make PW calazones this afternoon (hmmmm........).....not sure what else.  This is going to be a sad week for us, food-wise because I refuse to go to the store. I want as much $$ to take with us next week as humanly possible.

    I made chicken enchiladas last night, so we'll probably have leftovers one night.  Other than that, I'm thinking:

    ~chicken fajitas, refried beans, chips/salsa
    ~pork chops, mashed potatoes, veggie
    ~burgers
    ~some kind of beef casserole
    ~I have a baby shower to go to Saturday, so I'll probably pick something up on my way home
    ~Sunday will probably be crockpot night--chicken and dumplings or beef stroganoff

    (sorry, on a mac so it's not clicky)

    I use Slap Yo Mama seasoning on the chicken usually, and DH hates tomatoes, so I put the sun dried tomatoes in there for flavor, but I make sure to fish them out right before I serve it. But it's sooo good. And I love that there's no butter--makes me feel better. :)

  • Tonight we'll probably eat out because I want to go to the mall to spend my bday money.  I thawed out a turkey over the weekend, so we're cooking that tomorrow night.  The rest of the week we'll probably do leftover turkey, venison steaks and fish.  No real plan or recipes, obviously.

  • Tonight we went out for pho. Tomorrow I'm making chicken and wild rice soup. We'll have that for leftovers on Wednesday. And that's as far as I've gotten in meal planning this week!

  • H does most of the cooking, so I usually have no idea what's for dinner until he starts making it.

    Tonight we're having steaks with crescent rolls and broccoli. Either Wednesday or Friday I'll probably have pasta. Other than that, it's a surprise!

    That's what I was thinking!  I never think about buying sweet potato fries, I need to write that down.

    Also, can you post your recipe for the french dip sandwiches.  I was thinking I had it but I can't find it if I do....

    This is SO good.  I toast some provolone on the bread...and use a packet of lipton onion mix on the roast too.  It falls apart and is amazing.

    Ingredients

    • 4 pounds rump roast
    • 1 (10.5 ounce) can beef broth
    • 1 (10.5 ounce) can condensed French onion soup
    • 1 (12 fluid ounce) can or bottle beer
    • 6 French rolls
    • 2 tablespoons butter

    Directions

    1. Trim excess fat from the rump roast, and place in a slow cooker. Add the beef broth, onion soup and beer. Cook on Low setting for 7 hours.
    2. Preheat oven to 350 degrees F (175 degrees C).
    3. Split French rolls, and spread with butter. Bake 10 minutes, or until heated through.
    4. Slice the meat on the diagonal, and place on the rolls. Serve the sauce for dipping.
     
    Eta: Use the darkest beer you can find for the beer part!
