  • it's a hectic week in the Del household, DH has been away for work since Sunday and then the kids and I leave for the mts with my parents at the end of the week

    sun- party

    Mon- ordered chinese to save my sanity

    tues- penne in vodka sauce with grilled chicken, salad and garlic bread

    wed- that five ingredient italian cream chicken in the crockpot that i posted from pinterest before, over rice and a veggie of sorts

    thurs- tacos

    Fri- mountain bound!

    I was hoping to stop for some Federal donuts this morning for my indulgance but time did not allow, hoping they have some left later on

  • mon- roasted a chicken to use in parts for the next 2 weeks (obviously some of it will go in the freezer and be taken out accordingly) and knocked out 2 loaves of banana bread for breakfasts and snacks.

    tues- roasted chicken breast w pan gravy and roasted winter veggies

    wednesday- eggplant, crimini mushrooms, red/yellow bell peppers, diced tomatoes over penne

    thursday- chicken tacos, red beans and rice

    friday- shrimp, grapefruit and avocado salsa (need to figure out how to do this one), orzo, and some veggie

    saturday- off

    sunday- london broil, roasted potatoes and onions, green beans

    dh is giving up carbs for lent.  to him this means pastas, breads, and rice..... ugh.  last year he decided lent was a great time to go vegetarian.  i love the man but dear goodness his lenten resolutions are taxing on my menu.

  • I actually planned my menu for the week and wrote it out on my whiteboard in my kitchen.  It makes me more likely to stick to it!

    Monday - Hot dogs and roasted potatoes.  Don't judge.  It was a quick dinner after we got our taxes done.

    Tuesday - A giant caesar salad.  I've been craving one for a while.

    Wednesday - Roasted garden herb pork loin, mashed potatoes and a salad

    Thursday - Chicken and cous cous with salad (can you tell where I get my veggies in?)

    Friday - Not sure because I have a 30th birthday party (sans DH) but I want to eat dinner before I go so I don't over indulge.

    Saturday - I think I want to make a pizza or a calzone or stromboli or something

    Sunday -EDIT: that would be KelDel's Tuesday dinner makes me want to make some of Giada's vodka sauce so maybe that with farfalle.

  • Not a very productive cooking week in my house.  Lots going on.

    Mon - took a group of students to dinner. ribs, baby!

    Tues - pork tenderloin, sweet tater fries and a veg if i can find one in the freezer that appeals to me

    Weds - probably a shrimp pesto sun-dried tomato penne

    Thurs - out to dinner with friends

  • Our place is Terryin on Snyder Ave they have Chinese and Japanese and great sushi. But they are closed Monday's which I completely forgot so we had to settle for South Garden on South st

  • Leftovers!

    Sunday I made chili and cornbread

    Monday was tuna steaks 

    Tonight I think I'll get leftover roast beef from my inlaws.

    Otherwise we will have kielbasa. 

    Wednesday we will have some sort of fish. There is a "seafood spectacular" at Acme, lol, so we will load up for lent. 

    Thursday will probably be chicken and pasta alfredo.

    Friday we are going to a political fundraiser, so we will probably just eat cheese and apps. 

    Saturday I'll probably roast or stew a chicken.

  • Mon - turkey burgers and salad

    Tues - baked chicken, salad and maybe couscous

    Wed-Fri - ? I'm not doing well with planning.
