Meatless meal ideas please
With Lent fast approaching I need meatless meal ideas.

Hmm a typical week at our house:
Chili (with beans) or black beans or black bean burritos, or red beans and rice, refried beans or bean burritos
Pasta with a green veggie (roasted brussel sprouts, olive oil and red pepper flakes, broccoli and marinara sauce, olive oil, garlic and garbanzo beans)
Mac n' cheese and broccoli
lasagne (we usually do broccoli in it, but have also done spinach)
omelets or even scrambled eggs with toast (I can make omelets, but manage to screw up scrambled eggs)
soup and bread (cream soups, minestrone, etc.)
Veggie burgers and fries
Baked potatoes with fixn's
Baked sweet potatoes with broccoli and french bread
Sitr fry ( we put eggs in ours to add a bit of protein) with rice
Stuffed peppers (peppers stuffed with rice, tomato sauce, onions, chili powder/cayenne pepper, corn, & cheese) We also use quinoa or couscous, too
ETA: Spinach souffle or a bastardized version of it 4-6 eggs beat until fluffy, add some milk (about 1/2 - 1 cup) add 1/2 bag of spinach and 1/2 - 1 cup of cheese along with some pepper, salt and nutmeg. pour into greased 1 1/2 - 2 qt baking dish and bake at 350 for 30 minutes or until golden brown
This squash enchilada recipe calls for chicken broth but you could just substitute veggie broth.

I layered of roasted eggplant, mushrooms, and spinach, topped it with tomato sauce, and then mozzarella cheese (I added turkey pepperoni) for a sort of pizza casserole.
Other ideas -- spinach and mushroom enchiladas. Roasted veggie lasagna. Turkey pumpkin chili.

We don't make many recipes with meat at all. I do eat meat, but at home we try not to use it:
Frittatas: Egg, veggies, cheese
Stir fry: veggies and shrimp w/edamame
Tuna steaks
Chick pea masala (indian flavors)
