How often do you give him/her a bath?

Rarely. We get our golden groomed a few times a year so they bathe him there. We bathe him at my parents another once or twice a year (its easier outside with a hose). The lab gets a bath once or twice a year, and he gets rinsed off after he's been swimming in the lake and gets all muddy. He doesn't really get groomed though.

Jax needs a bath about 1x every two months. We'll wipe him down if he gets super muddy in between bathings.
Jewels has exceptionally short hair and very dry skin so we try not to bathe her often, however Jax licks the crap out of her so she does smell and needs to be bathed about 1x a month. We'll rotate how often we use shampoo with her so we don't dry out her skin even more.
Usually about 2x a month.
She either rolls in poo, rolls in the grass and turns green (shes white) or hops in the tub and stands there wagging her tail looking all cute....she loves a bath!

They get baths more frequently in the spring and summer since its easier to do it outside. Our yellow lab doesn't get smelly, but we're learning that our border collie/lab mix puppy starts to smell after a while.
DH and Diesel run in the woods almost every Saturday, so Diesel gets bathed when they return. He also gets a bath when we pick him up from doggie daycare.
Diesel loves baths, so this really isn't a challenge.

For me, it's not really about smell or dirty, it's more about maintaining skin health that in my opinion you don't want to bath too infrequently. Sure, some dogs are naturally more oily, or get more dirty because of how/where they play, or their coats smell more because of what they are fed or their overall health so it varies how much you want to bath.
I usually bath feet, legs, under carriage, and butt every week to every two weeks or so. I do a full bath less frequently but I groom to remove any dirt in between.
One thing that's important when do you bath is to make sure that the dog is completely dry down to the skin. If you think that your dog smells, it often can be because of bacterial growth on the skin that can grow as well as cause hot spots in areas that aren't completely dry.
