I would love to hear from those that bake with Stevia. I found the chart on line that the conversion is not 1-for-1 but more like 1/3 tsp Stevia Extract Powder = 1 cup sugar. (Sweetleaf Stevia)

Stevia is a South American herb used as a natural sweetener for centuries. The leaves of the Stevia rebaudiana plant have a refreshing taste, zeroglycemic index, zero calories and zero carbs. It is 25-30 times sweeter than sugar, and far more healthy!

I have baked with Stevia. Just put it in where the recipe requires sugar. It also depends what kind of product you are using as well.
As far as other healthy sweetners, there is xylitol and agave nectar. Agave nectar is also used in baking although I have not used it yet so we will see how it goes. Xylitol is great for dental carries and I have a toothpaste complete with it. Both are low on the glycemic index (xylitol is at zero with stevia)
Something to note, some of the stevia sweetners are "laced" with dairy so if you are lactose intolerant watch out!
Other note- I have actually bit into a stevia leaf and it is sweet! WOW!
