Pulled Pork MEAT Question

i have a BBQ pineapple pulled pork recipe I was all excited to try until I got to the store and saw what pork shoulder looks like.  Yikes.  (Sorry I'm not a big meat eater!)  Anyway, it had what appeared to be pig skin still on half of it.  Is that normal?  Do I trim that off before putting in the crock pot or what?

  • I don't remove it but I have pulled it back and placed like garlic or other spices inside and then pulled it back over.

    My next dumb question - - so, if i don't take it off, then after it cooks am I shredding it like the rest of it?  Or do i discard it?

  • You can trim it off or keep it on. It won't shred like the rest of the meat after its cooked so I usually discard it, however, some people eat it.

    Also, you don't have to use shoulder meat. You could use a leaner cut like a pork loin.

  • Yeah it doesn't shred well. I only use shoulders in my smoker so I feel like the skin helps keep it moister. If I am doing pork in the crockpot I use a leaner piece that is usually cheaper and smaller and doesn't have that skin on.

    I always call them pork roasts. They are like $1.99 to $2.99 I am not sure the real name. Maybe someone else will know. They are just in the pork section of safeway. I know that doesn't help at all. When I get home I am sure my husband will know and I will post.

  • i have usually used a shoulder or butt.....but def prefer the loin roasts.  The shoulders and butts are sooo fatty, I alway pick out all the fat as I am shredding.  Which makes the process take awhile, as I can't just throw it in the mixer to shred.

  • pork butt is a humungous PITA to trim the fat off of  IMO so I would use something less fatty, but I think it is more traditional for pulled pork for sure.

     

  • I use pork tenderloin.  Im like you and dont like all of the fat on most cuts of pork (plus why am I paying for all the poundage in fat Im just going to end up trimming off, LOL)
