Let's talk about cheese

Why had I never been informed how incredibly yummy smoked provolone is? But when I grate it, the smell gets on my hands and doesn't want to come off no matter what I wash them with. What else am I missing out on in the world of cheese?

    When I made my homemade mac and cheese last year, Bethie was a big help in learning me about cheese.

  • Have you tried truffle cheese? Truffle thunder ch?vre out of Humboldt on omelette can make me teary. 

    If you have a Costco, they get in a champagne cheese that goes amazing with fresh fruit.  Eta: it's from Finger Lakes which always makes me chuckle.

    Sometimes I wonder if scientists have never seen a sci-fi movie before. "Oh yes, let's create a super species of deer. NOTHING COULD POSSIBLY GO WRONG." I wonder if State Farm offers a Zombie Deer Attack policy. -CaliopeSpidrman
  • This is a controversial topic, but if you ever come to St. Louis, you have to try provel. It is a bastardization of provolone, but it is glorious. Well, not everyone loves it, but I do.

  • Trader Joe's had a dark chocolate and aged white cheddar cheese that's amazing. The chocolate is subtle, but it's really nice. I got it about a week ago but we didn't break into it until last night.  It's their spotlight cheese of the month of whatever, so they should still have it. 

    They had a honey goat gouda once that made me wanna gain 100 pounds eating it, but it was another month-only deal, so maybe it's good that it's gone. Though their newsletter informs me that they have another honey goat, so now I have to go back and try it.

    I think it's pretty widely available, but I love love love Irish cheddar. And I've mentioned my love of the stilton family many times.

  • Would stainless steel work (like it does with garlic) maybe?

    Also, if any of you like goat cheese and can get Purple Haze (lavender enfused) or Sgt. Pepper (roasted red pepper) try it. It's delicious when mixed with egg whites for breakfast. And on crackers. And plain. And just delicious in general.

  • I'm a whure for really good parmesan.  I could sit and eat chunks of it plain.

    And nothing beats a really good mozzarella with some tomatoes and basil from the garden drizzled with balsamic.  Droooooooool.

    I grate parmesan cheese onto just about everything except cake and ice cream.

    I had a blueberry cheddar from Wisconsin once that was amazing.  Pretty much everything goes with cheddar I've decided.

    I think no matter what, when it comes to cheese you have to get the good brands and not the cheepy stuff.

  • We usually snack on it, but we've made pizza with shredded mozzarella, fresh mozzarella and shredded fontina and it is amazing.

  • Snack, with fruit, with crackers and fruit and maybe some cured meat instead of cooking dinner. I like using nice cheeses when making tarts or meat pies and stuff. It turns out lots of cheeses go well with chicken, mushrooms, onions, red peppers, and pie crust.

  • We have a friend that makes fresh mozz and sells it at the farmers markets around town. I am now totally spoiled because regular store (even cheese shop) mozzerella isn't nearly as good as the stuff he brings that is fresh and still a bit warm.

    I eat cheese with apples (sharp cheddar or dubliner) and crackers and in dishes (pasta mostly) and a bazillion other ways. Basically, any way I can possibly eat cheese I use as a method to eat it. I heart cheese.

  • My old boss eats cheddar (the sharper the better) with a slice of apple pie.  Proof that there is no bad way to eat cheese.

    This but with olives instead of meat. Sometimes a baguette instead of crackers. 

    With grilled veggies in omelettes or crepes.  

    Pasta tossed with tomatoes, pesto or lemon caper sauce and grated hard cheese.

    Oh, the ch?vre maker is Cypress Grove. I haven't had anything of theirs I didn't love.

  • Cheese is awesome and often a go to snack.  I'm not sure if it's only sold locally, but Beecher's Flagship is a great snacking cheese and makes for some wonderful mac n cheese as well.  I also like a good sharp cheddar, havarti, brie, mozzarella, and the list goes on and on....

  • fromage d'affinois - it's a soft, brie-like cheese. i spread it on crusty bread and shove it in my face. this is an acceptable dinner.

    Oh god the humboldt fog truffle cheese is the cheese of my dreams. So good all their cheeses are amazing.

    Yeah.  AND?  I'm weirdly defensive of provel.  Like, I stopped going to Pi because their waiters wore those anti-provel shirts and they made me angry.  PROVEL IS MY FAVORITE.  My bestie and I used to just snack on rope provel.  This whole thread has a stoned munchies vibe.

    I thought that was just a New England thing to put a slice of sharp cheddar on apple pie.  hmmm

     Using only have a pizza dough recipe, roll it very thing and put chevre with ash, scallions and halved cherry tomatoes on it.  That's the only pizza I'll eat

  • I eat cheese as a snack all the time. Fresh mozzarella with tomatoes, basic, cucumbers and balsamic vinaigrette + salt and pepper is my go-to snack in the summer.

    I adore Parmesan, Gruyere and queso fresco, actually. I really love queso because it tastes incredibly fresh.

    I do not like goat cheese, it tastes sour and metallic to me. I can tolerate brie but it doesn't taste nearly as good as Parmesan. Too sour. 

  • Baked brie or baked camembert with berries, spread on some french baguette is pretty much my idea of heaven.

    My dad always says " Apple pie with out cheese is like a kiss without a squeeze".
