*Kate*Maria* and other bakers

I think I'm going to do the Operation Baking Gals thing, sending baked goods to troops overseas. I signed up! I know you have a ton of stuff, Kate and Maria, I remember you mentioning a to die for cookie... What are the best two recipes any of you would suggest (for a fairly beginner/medium level baker) in the following categories that would keep/ship well:

Breakfast Muffins

Cookies

Cupcakes

  • You are probably thinking of S!utty Brownies, but they would not ship well. They are too ooey gooey.

    The Oreo Cupcakes on our Cooking Blog would ship well and are fabulous. Also, my mom's fudge. Just line the container with wax paper and in between the layers.

    3 - 6oz. bags of semi-sweet chocolate chips (18 oz.)

    1 can sweetened condensed milk

    1 ? tsp. vanilla dash of salt

    ? - 1 cup of nuts (optional)

    Combine chips and milk in microwave safe bowl. Melt in microwave, stirring after a minute. When melted, add vanilla and salt (and 1 cup chopped nuts, if desired). Line 8 or 9 inch pan with waxed paper. Spread chocolate mixture on top of waxed paper and put in refrigerator for 2 hours to set. Remove waxed paper and cut into bite sized pieces. Store in air-tight container. Enjoy!

  • One more thing, my mom sends chocolate chip cookies to my friends in England all the time. (If you've had my mom's cookies -- you know!). Regular 'ol cookies and they travel great.

    but she undercooks them and I've never had chocolate chip cookies that are so good. She does something "secret" or something.

    I don't, off the top of my head, have any cupcakes that would be as good without icing!

  • Don't you think you could do cupcakes and put the icing in a separate container that they could put on later? I'm not sure....
  • I can't think of a homemade icing that could be left out for that long and be okay.

     I usually do thinks that are somewhat less traditional but ship well - rice krispie treats in different flavors, caramel popcorn, spiced pretzels, granola bars. I've sent brownies/blondies/bar cookies too - I usually bake them in a disposable pan and send them un-cut to keep them from drying out.

  • That's a good idea! I like the idea of lemon bars or I may make a banana bread...
