Weds - we might go out with friends depending on the weather if not bacon pierogi bake and salad

I hope we will use it a few times. It cost me 30 for the year so if it saves me 100 at some point it's a good deal.

i was feeling lazy and uninspired. well, not really lazy but i have a ton of other stuff to take care of, so food got the back burner.
last night we had breaded/baked tilapia, roast fingerling potatoes and steamed string beans.
tonight we'll start using the costco rotisserie chicken. it's going to be a salty week since that chicken usually lasts us three dinners. i may use it for two and shred and freeze the rest though.
one night, we'll have the chicken plain with easy sides - steamed veggies and either TJ frozen rice or pasta and sauce.
i'd like to use the chicken as part of another dish in some way for another night. maybe quesadillas or tacos or chicken salad sandwiches.
i have a package of chicken sausage that i'll slice and saute and make a sauce out of sherry, garlic and chicken broth - over pasta.
maybe pancakes and eggs another night
i actually just got back from grocery shopping a bit ago- so for once i can answer
m- tilapia, couscous, zucchini pie
t- beef stirfry w rice
w- pork spare ribs in the crockpot (this is an experiment, they were on sale. not really my thing but dh loves ribs)
th- roast chicken w broccoli
fri- leftovers or go out
sat- out
sunday- turkey meatloaf and prob a salad
M- pasta with homemade sauce and garlic toast
T- i'll be out doing bridesmaid stuff- I think we are ordering pizza
W- Pesto Chicken with tomato Mozzerella and leftover rice from saturday.
T- Pulled Pork i think
F- Probably something quick as I usually go grocery shopping Friday nights after work.
Nicinnewyork can I have the recipe for the zucchini pie? Also ribs in the crock pot are AMAZING!!!!!
I really stretch meal planning so I'm finishing up my "weekly" plan. Although I shopped almost 2 weeks ago. Lol but we ended up with a lot of pasta
Creamy Taco Mac
Penne ala Vodka with chicken
Shake and bake pork chops with rice and veg
Crock pot ribs With Mac and cheese and veg
I've got a recipe for an Italian chicken with thighs I. The crockpot but will make later this week.
And we had lasagna cause DH had a craving. Lol
here you go- got this one from my MIL. it's a little quiche-y tasting but sue will actually eat the zucchini this way.
3 C zucchini chopped or sliced very thin
1 C bisquick mix
4 eggs
1/3 C veg oil
1 T parsley flakes
s/p to taste
optional- chopped onion, 1/2 C shredded mozzarella (i always leave these out)
preheat to 350. grease pie plate. prepare & mix all ingredients. bake 40-50 mins. move pan to upper shelf half way thru to help brown the top.
