What's Cooking?

Sunday- Pinterest 3 ingredient Italian slow cooker chicken with egg noodles

Monday- Pasta

Tuesday- Roast Beef Sandwiches

Wednesday- I have pork chops in the freezer, so I may try this.  Seems similar to Sunday's chicken dish and DH actually requests that one, so we'll see.

  • Pretty much all I have is chicken right now so I'll be sprouting feathers by the end of the week. 

    Sunday: baked country chicken with lemon pepper orzo

    Monday - leftovers from yesterday

    Tuesday - pasta with vodka sauce.  I made a batch of sauce last week and froze it to take out as needed.

    Wednesday - chicken with brown rice.  I want to do something with prepared honey mustard and ideally in the crockpot so I have to find something.

    Thursday - cereal or hot dogs or a salad or something.  Although I may switch this with Tuesday so I'm not having pasta 3 days in a row.

    Friday - take out

    Saturday - lasagna soup

  • I'm clearing the freezer a little bit, and I may have to report for Jury Duty selection tomorrow and then if I get picked the week is possibly blown.

    Tonight - Taco salad (leftover turkey taco meat)

    Tuesday - Chicken stir-fry w/ soy-ginger sauce over brown rice

    Wednesday - Buffalo chili (from freezer)

    Penne Puttanesca - I made Halibut with tomatoes, olives and capers on Saturday and so have olives and capers to use up.

  • This is going to be a very uneventful week in my kitchen.

    Tonight - leftover Chinese

    Tues - out to dinner with my sister

    Weds - something quick and easy since I have a hair appt late afternoon

    Thurs - again something easy with no leftovers...possibly blts or salads

    Fri-Mon - out of town

  • tonight - home made pizza with chicken, feta, red onions and spinach.

    tomorrow - something with ground turkey but i'm not sure what yet. maybe meatloaf with orzo. That lemon orzo Jess mentioned looks good.

    Wed - probably left overs as I have an acupuncture appt.

    Thurs - maybe baked chicken with potatoes and salad.

  • Sat - DH made spaghetti carbonara

    Sun - sausage and peppers in crockpot

    Mon - homemade pizza (pesto, mozz, tomato w/ whole wheat dough)

    Tues - thai chicken & zucchini over rice

    Wed - salad (greens, red beets, goat cheese) with flatbread & hummus

    Thurs - maybe chicken fingers & black bean quesadillas

  • kernal just fyi I did have to change a couple of things, in case it matters to you.  I only had a cup and a half of chicken stock, so I had to sub the rest with water.  I also don't have mascarpone on hand so I used cream cheese.  And I omitted the chives because I don't care for them.

    While it was very tasty, it was very lemony, almost overpoweringly so.  Next time, I might use a bit less lemon juice and zest because you can always add to taste.

  • stayed later than expected at a st. pat's parade fundraiser last night so this week got a bit wonky.

    m- baked mac and cheese with ham mixed into it.  green veggie.

    t- london broil, roasted onions and potatoes, green beans

    w- jambalaya w chicken, kielbasa and shrimp

    th- beef stirfry (leftover beef from london broil) w fresh cauliflower, frozen stirfry veggies, brown rice

    f- not sure if we are driving up to philly or if we will be home.  tbd.

    tonight - tin foil bbq chicken for dh/tin foil lemon pepper chicken for me

    tomorrow - italian sausage and pasta

    wednesday - breakfast for dinner

    thursday -  tacos

    friday - pizza most likely

  • Kernal: the sausage & peppers are so easy! We make it up as we go...but it's usually something like this:


    2 packs of sweet italian sausages (you can use any kind of sausage)
    2-3 peppers cut up (we do one red, one green, one yellow)
    2 big onions cut up
    1-2 cans of diced tomatoes (or 1 big can)
    tomato paste
    splash of red wine or water
    salt, pepper

    Let it cook for 6-7 hours...we usually make sausage sandwiches on a baguette or get hoagie rolls.

  • being that both DH and I just returned from being OOT, the fridge is bare so it is going to be a clean out the freezer type week.

    Mon- ordered chinese

    Tues- turkey london broil, mash, and whatever frozen veggie is in there

    Wed- grilled filets and ???

    Thurs- the crockpot italian chicken that never got made last week over egg noodles and a salad

    Fri- sushi girls night at a friends

    Sat- party

  • Update...I came down with the cold of the century this week.

    So what I've really had so far is chicken soup, sushi, wendys burgers and I just might be able to muster the energy to cook dinner tonight...we'll see. :(
