I am looking for cooking classes, specifically classes that will teach how to flavor/spice dishes, for my FIs birthday.

I'm new to this board - so hello!
Not sure where you live, but I have taken a number of cooking classes at the Cambridge Center for Adult Education (there is also the Boston Center for Adult Education). There are ALL sorts of classes, I've done a Cooking for Beginners, the Art of Home Cooking (your FI might like that), and a gnocchi making class. YUM!
And, we will be taking an Italian cooking class with DH at the Cambridge School of Culinary Arts next month.
I get catalogs from Sur La Table, and I noticed that their store in Natick offers classes.

basil, oregano, or just italian seasoning goes with pasta...

If the actual class is not the gift but rather the cooking, google could probably help you out tremendously here as well as save you the $$ of a class.
Yeah I am not sure at all what you mean.
Take the beginners cooking class at the Cambridge Adult Center. I did and it was very helpful. People might be confused, but I think you might just be like me... I had no idea what to do in the Kitchen or what spices to use. I just didn't grow up with my mom or dad showing me these things and I never learned. We ate out A LOT growing up.
