Vegan coming to dinner. Please help.
I was going to post this on the vents/confessions thread, but I really need help so I figured I'd do it here.
My husband's best friend is visiting friday night along with his wife and three-year-old. The wife is vegan and doesn't drink, and the three-year-old is kind of a terror.
I'm really looking forward to this, can you tell?
Anyway, I'm expected to make dinner for all of us. In the past, she's been just a vegetarian, which I can handle easily, but now has gone vegan. What do I make?
My husband and I eat low-carb, but I've accepted that it's essentially impossible to make a non-carb, non-meat, non-dairy dinner that isn't just a green salad. So I guess we're giving that up for the night. I would rather not make two separate dinners.
Oh my god. Just typing this out makes me want to tell my husband we're going out to dinner, despite my general love of cooking and dinner parties.
The only thing right now I can think of is spinach and mushroom enchiladas with two baked separately without any cheese, with some kind of cheese and butter free mexican rice and a sald. I know the basics of cooking vegetarian/vegan -- veggie broth instead of chicken broth, olive oil instead of butter...is there anything else I should be aware of?

I think the enchiladas sound like a great idea!
My uncle went vegan a year ago and the way my family does it is we don't make everything 100% vegan, we just separate things as much as possible (so like if we want to have hardboiled eggs in our salad, we dont put the eggs in the salad but in a bowl on the side so those who want them can add them). If we're having shrimp with rice we'll serve the two separately, etc.
This wont work for an entire meal but it will allow you to get away with some nonvegan things at the meal.
We do stir-fry with Gardein beefless tips. It's a great sub for vegans, and can be bought at a lot of grocery stores. It has better flavor than tempeh or tofu, IMO. Then we add whatever veggies we want and some soy sauce and brown rice and you're good to go.
Lemon Pepper angel hair pasta with broccoli for the vegan, shrimp for the others
Penne with garlic olive oil and veggies (add chicken shrimp to the others)
Stir fry is a great option, like pp said.
Mediterranean Coucous or Quinoa
Spicy marinated tofu and spicy marinated chicken with rice/veggies

You have to watch out because she sometimes uses some hard to find ingredients (nutritional yeast), but would at least give you some ideas on how to sub. Most recipes are also healthy, as a bonus.
This is the blog I read. She is vegan and went to culinary school (not that it matters). I have made a few of her things and they have been fabulous! I love curried potatoes with brussel sprouts (she uses peas).
