meal planning for no kitchen

We're hoping to kick off the demo for our remodel next weekend which means that we may not have a functioning kitchen for a while.  I'm trying to brainstorm some easy freezer meals we can toss in the microwave to re-heat since we can put the micro anywhere in the house.  We want to avoid lots of dishes too since we'll be doing them in the laundry tub in the basement until cabinets are installed and we can take measurements for the countertop. If it gets nicer out, we can grill but I'm not counting on that method just yet! 

I was going to make a batch of lasagna and also a batch of chili we can re-heat in the crockpot.  Any other ideas?

  • I have found "frozen meal" sections on lots of the recipe websites.  Maybe try allrecipes.com?  I use that one all the time.

  • If you like burritos, the Pioneer Woman's beef and bean burritos are a good choice!  We always have a stock pile of them in the freezer and they reheat well.  If you want a meat free option, we substitute boca or morning star crumbles for the ground beef.

  • I made a few of these freezer-friendly meals from the Martha Stewart website for my parents after my mom had back surgery and was laid up for awhile (my dad is mostly clueless in the kitchen!). My dad loved the tex mex beef enchiladas. I had to give the recipe to my mom because he asks for them all the time.

  • I second the burritos. When you pull them out of the freezer, just wrap a burrito in a wet paper towel and microwave for 2-3 minutes. You can also make breakfast burritos and do the same thing (scrambled egg, ham or sausage, peppers/onions/whatever, cheese).

    Do you have a Foreman/ countertop grill? Chicken breasts come out just about perfect on there. You can also grill veggies on it or make paninis/ grilled sandwiches for something different.
     
    You can make an egg in the microwave. Morningstar Farms also has several things that are microwavable.

    Soup (any kind) is good to make ahead and freeze. We frequently do chicken, meatball, minestrone, and spicy tomato soups. Let me know if you are looking for recipes.

    Whatever you end up making, make sure you split portions up ahead of time (not sure why I didn't think of that the first time I make freezer meals). Re-heating a full batch of anything in the microwave can be time consuming and you don't want to thaw and then re-freeze left-overs.

  • Here's another suggestion beyond the microwave. If you don't have one already, get a small countertop oven.

    We have this one, it's awesome. We bought it at Sam's Club, it was about $30 less there than Target. It fits more than you would think, it's bigger than a regular old toaster oven. I use it to bake casseroles in a 8x12 glass baking dish all the time. A 12-inch round pizza pan fits in it.

    I use mine all the time, I hate microwaving things. My microwave goes months at a time without being used. The small oven heats up really fast and takes a lot less energy to use than the regular oven, so I use mine often if I'm only baking one thing. I wouldn't recommend it if you are baking a whole batch of cookies or something, it would take awhile since you can only fit in one pan at a time, but it works great for a lot of things. It would give you a lot more options than the microwave.

  • We grill all year. The few seconds we are outside are worth the yummy grilled food. 

    I would also look into crockpot recipes. Get the liners for easy clean up.

  • Awesome ideas all - I'd love burritos and I love Ree's recipes (and her humor and pictures too!).  I'll have to do some more soups too - that is a great idea.  
  • ooh - and I do have a foreman. It is among the list of items that live in the basement since our kitchen was so non functional we didn't have enough cabinet space for all our stuff and I, consequently, forget about using it.  
  • What about straight up crock pot meals?

    Pot Roast:

    Rough chop one onion and put in bottom of crock pot.  Put a beef bottom round roast on top.  Through in a few peeled and chopped potatoes and carrots (or fingerling potatoes and baby carrots for fewer dishes).  Add one packet of Lipton's onion soup mix and 1 can of beef broth.  Cook on low for 8 - 10 hours. 

    Shred leftover beef to make great sandwiches.

  • I also grill year-round, it's why I own a gas grill...  But you really can cook everything you would in a normal oven in a microwave if you need to.. 

    As for good freezer meals - pulled pork/beef...  Just slow bake it in the oven with a little Lowry's and possibly dried onions, chop it up and put it into freezer bags and you're good to go...
