Need menu ideas for Fishy Fridays

I'm stumped at what to make tomorrow for supper.  DH doesn't really like warm tuna (but he'll eat it).  Anybody have quick and easy or crockpot non-meat recipes?  Tuna is the only fish I'll eat so our choices are very limited!

  • Non warm- tuna=tuna salad? You could put it on a romaine lettuce salad, in a wrap or make a tuna melt out of it.

    Portobello mushrooms are a great non meat item which has a "beefy" flavor and is relatively satisfying. Rachael Ray makes a Spinach and Artichoke Stuffed Portobello Mushrooms with a panzanella salad that looks pretty good. Or Portobello Burgers with Roasted Pepper Paste and Smoked Mozzarella would be another idea.

  • I marinate mine in soy sauce and them sometimes do a soy sauce reduction (just add cornstarch) and serve w/ rice and a veggie.

    I also marinate it in lemon, wine and the herbs of your choice (I like sage rosemary or thyme) 

    Then no matter how I marinate I grill it on my grill pan stovetop and it comes out lovely! :) Mmmm now I'm craving tuna w/ soy sauce.

    Also if it doesn't have to be fish I will do all sorts of pastas!!

    Or I make lo mein (veggie) or fried rice (veggie)

    Or veggie soup....but thats a little time consuming.

    Or breakfast for dinner (omelets and potatoes, pancakes or waffles or french toast)

  • How about tuna burgers?  My mom used to make them all the time and they were a hit.  Tuna steaks are good too - you can eat yours however you want and maybe shred DH's up after cooking it, let it cool and put it in a tuna salad or something for him.

    Or, would he eat sushi?  Spicy tuna rolls!  :)

  • I like making veggie recipes instead of sea food recipes (sea food is expensive and harder to keep).

    My favorites veggie recipes are: stuffed peppers (with rice, beans, cheese, and chopped veggies), pistachio burgers, black bean burgers, chickpea burgers, veggie chili, and thai curry coconut soup with tofu.

    Sure!  This is just a basic recipe, there are a lot of steps you can substitute things into:

    Ingredients 

    1/4 cup rolled oats
    1/8 cup pepitas (I like doing pistichios here)
    1 can beans (or chickpeas), no salt added, rinsed and drained
    1 medium carrot, grated (I like adding corn or celery here too)
    1/2 cup parsley leaves (I like cilantro here too)
    1 tablespoon olive oil
    2 cloves garlic, minced
    1/2 teaspoon kosher salt
    1/4 teaspoon chili powder (all the spices are optional, you can add different ones for a different flavor)
    1/8 teaspoon cayenne pepper (if you like spicy)
    1/8 teaspoon red pepper flakes (if you like spicy)
    1/8 teaspoon cumin 

    Directions:

    In food processor, combine rolled oats and pepitas. Process until coarsely ground.

    Add beans, carrot, parsley, olive oil, garlic, salt, chili powder, cayenne pepper, red pepper flakes, and cumin. Process until well-combined, about 30 seconds. Stop once to scrape down sides if needed.

    With wet hands, form mixture tightly into four equal patties. In a nonstick skillet or on a nonstick griddle surface, cook patties for 3-5 minutes per side until lightly browned. Serve on whole wheat buns.

  • For tuna ideas, I love making Tuna Heroes (open faced). My hubby doesn't like tuna, so I always just make it for myself since it's not too difficult to make. And for other fish ideas, I like to pick up catfish from the deli at our grocery store and serve veggies with it. it's not necessarily homemade, but it's something quick.
