  • I'm so ready for Friday!  We are on our first month on a cash basis and I was worried that we would overspend at the store last night, but we were good and came $7 under budget!  Woohoo!  Now I just hope we didn't forget anything and that the food lasts a week like it should.

  • Hi ladies!

    I miss you girls this week! It feels like I can only get on early during breakfast when the board is dead, and then again late at night when everyone's gone. It's been such a crazy week. The last two nights we've been in downtown Dallas 'til nearly midnight for workshop/business development things, and while it's awesome, I just don't feel like I've got enough time in my days.

    Mack is doing better with this diet than I am. I mean, I'm not TOTALLY sucking at the low-carb stuff, but yesterday I'd had a really hard day and was sad and frustrated and exhausted, and we met some friends at IHOP for dinner. Mack did so good and got a big salad... this girl? I ordered pancakes. No regret whatsoever. I guess I'm a believer in the cheat day!

  • I'm with the almost Friday thing! Please let this day go by quickly. Jeff and I are talking about finding a new house this summer!! With prices still being decently low and interest rates even lower we though it would be great to find our "forever" home.

    I totally flaked and missed a doctor's appointment yesterday. I've never missed an appointment before. I think I need to get my paper calendar back.

  • I am leaving for Houston this afternoon with the drill team.  Please pray for all of us!  :-)  We get to go to the Houston Galleria tomorrow (I've never been to theirs) and to see John Legend tomorrow night at the rodeo (which I've never been to before either).  They dance on Saturday and we come home on Sunday. 

    I'm excited because my brother will be showing up at my house in the next hour or so to start painting our bathroom!!!!!  Yay!!!!

  • I finally got the okay for a week off in December (in addition to the 1 week holiday break) so if you have any suggestions on 2 week trips within the US, I'm more than happy to hear them!  I think we are wanting something relaxing instead of being on the go 24/7 and we've tossed around the idea of a cruise.  This is our pre-baby trip.  

    The Bradford Pear tree in our backyard is blooming, which reminds me that I should check on our apple tree.  And I actually managed to bring a basil plant back to life after killing it but I'm not having much luck this second time. 

    I made Asian Pad Thai again but vegan style.  It was super yummy and the best meal we've had in the last week.

    I fell asleep in the beginning of "Are you there, Chelsea?" last night, woke up an hour later, watched Fashion Police for half an hour and fell asleep while trying to switch the channel from QVC to something else.  When DH came home, they were selling diamonds and DH wondered what I bought.  So besides cooking supper, I didn't do anything I had planned on doing but I'm okay with that.

    Well, if you were going at a more hospitable time of year, I would suggest the Grand Canyon, Nevada and California.  Sadly, the North Rim will be completely closed down and it could be snowing along I-40 making it fairly difficult to get through.  That is a fairly easy going two weeks though.  Just driving.  

    You could do the whole state of Florida too.  You could drive along the coasts all along the peninsula.  You could do that in a week and then cruise from either Miami or Port Canaveral.  

    Have either of you been to Washington DC?  I don't know what their weather is really like at that time but I would think that you could get a lot done in two weeks and still relax.

    I cheated yesterday too so you are in good company.  I had a taco salad with chicken and I ate the shell.  But I passed on the cheese and got a little bit of Italian dressing over ranch.  I felt bad about breaking the rules (and really, if I'm going to break the rules, I can't believe I did it over a shell and chicken) but I was not going to be able to make it through the day without something and it was gooood.

    Julie - YAY I love the Houston Rodeo! It's so much better than the Ft. Worth one.  Praying for you and I hope you have fun!

    We got some almost, yet pretty awesome news yesterday!  I couldn't be more excited and wish I could scream it out.  There are a few more things that need to happen over the next month to see if the news will be completely awesome!  :)  God is so good!

    Shortgirl, what about a snowy trip like Colorado or Vermont?  I really am no help for December since you've been to New York already.  Does it have to be in the US?

    Deepthi, I am very mad at you for forgetting you doctor's appointment, mostly because I want a progress report.  Yay for new house buying!

    I am going on a church women's retreat this weekend and cannot WAIT!  I am looking forward to recharging my spiritual batteries.  I go on this same one every year and love, love it.  It's not even my church either but alot of women from my church go to this one because we love the speaker.  So I will leave the office early tomorrow and come back late Saturday afternoon. 

    I made the Skinnytaste chicken rollatini with prosciutto and mozzarella last night and served it with long grain wild rice and brussel sprouts.  Delicioso.

    Florida is what we are thinking right now.  I've heard that Key West is pretty walkable and that is appealing to me.  I have not had much time to do research into what Florida offers us or what would appeal to us but I do like cities where you can use public transportation or walk, like NYC.  

    No we have not been to Washington, DC.  It interests me though and while DH likes history, I don't know if that would be up his alley.

    DH isn't really up for flying so it will have to be somewhere we can drive to, which is fine because we will be able to mark states off of our list.  Our original thought was to just take the train but the accommodations don't sound wonderful and there are tons of delays.

  • Stephie, Ha Ha you twisted my arm.  My DH, his dad & brother are working on opening a Taco Casa franchise.  They've been working on the deal since before Christmas and we are almost completely approved by the bank as of yesterday.  There are a couple more steps in the approval process and we hope to break ground at the beginning of April. 

    I also hope you having an amazing time this weekend at the retreat! :)

    Stephie, Ha Ha you twisted my arm.  My DH, his dad & brother are working on opening a Taco Casa franchise.  They've been working on the deal since before Christmas and we are almost completely approved by the bank as of yesterday.  There are a couple more steps in the approval process and we hope to break ground at the beginning of April.

  • Hee, Chelsea, it's a new thing, trust me!  And it came about mainly because Ben was tired of our usual repetoire of tacos/spaghetti/chili, repeat.  Once I found Pinterest I went crazy!

    And, not ALL the meals are healthy--like the white chicken enchiladas I made Sunday.  It has been alot of fun trying them all and seeing what we like and what we don't. 

    When you are cooking healthy, low-fat meals (or any meal for that matter), I have found using as many organic ingredients as you can makes a world of difference.  It just tastes better, which makes eating healthy that much more enjoyable.

    Amanda, that is very exciting news!  I think we have a Taco Casa by us.  I've never been there though.

  • Also, an AW - J just called and asked if I wanted a nice bike that his mom wants to get rid of.  I am so excited - I haven't ridden a bike since I was probably 14!  I'm actually kind of nervous about riding in the city, because I grew up in the country without all the crazy drivers.  I'm going to need a basket for Crispin Smile
